This is a basic and a simple northindian thali..I added a new twist to some recipes..Traditionally northindian thali has some kind of dals, two or three kind of sabzi and some paneer curry, curd, pickle and some vegetables..Everything is served with some roti and rice..Since I served it for dinner, I made this so simple with parathas, two sabzis, curd, pickle and some vegetables..I totally love northindian meals apart from southindian, those are the ones which I go for next..

The Menu in this simple thali is
Ajwain Paratha ( Recipe Soon)
Aloo Bhindi Masala
Sweet Corn Malai Sabzi( Recipe Soon)
Curd seasoned with salt, sugar and chilli powder
Gooseberry Pickle (Recipe Soon)
Vegetables of your choice
I made this for dinner couple of days before and served it to my family and my relatives who came to my house.They loved it a lot..Specially both the sabzis hit the spot..My perippa loved the bhindi masala and totally digged into it. Some people hate Okra,but it is my favorite vegetables , this is the one of the  vegetable which taste so good when cooked properly. If you cook right there wont be any sliminess in that. Combining okra and potatoes in a spicy onion tomato sauce makes these veggies so flavourful. These taste great with any roti, but I made it even more special with some ajwain parathas..I hope you love it and let me know what you think..

Ingrediants:
Ladysfinger / Okra – 10 chopped into big pieces
Potato – 2 large peeled and sliced into thick slices
Cumin Seeds / Jeerakam – 1 tsp
Oil – 6 tblspn
Salt to taste
Sugar – 1 tsp
For Grinding:
Onion – 1 large chopped
Tomatoes – 3 large chopped
Ginger – 1 inch piece peeled
Garlic – 6 cloves peeled
Green Chilli – 2
Spice Powders:
Chilli powder – 1 tsp
Coriander powder / Malli podi – 1 tblspn
Turmeric powder / Manjal podi – 1 tsp
Garam masala powder – 1 tsp
Cumin powder – 1 tsp
Method:
Heat 2 tblspn of oil and add the ladysfinger and fry them till golden. Remove them to a plate. Heat 2 tblspn of oil again and fry the sliced potatoes till golden. Remove them on to a plate.
Grind all the ingrediants given in the list to a fine paste. Set this aside till use.
Heat 2 tblspn oil and add cumin seeds, add the ground masala and cook them till oil separates from it.
Add in salt, sugar and all the spice powders in. Mix well and let them cook for a min.
Add in some water and bring everything to a boil.
Add in fried ladysfinger and potatoes and mix well. Lower the flame and let them simmer till oil separates from it.
Serve it with roti.

Take all your ingrediants
Prep them
Add onion, tomato, chilli, ginger and garlic in a blender
make into a puree
Saute some ladysfinger in oil
till browned and cooked
Now fry some potatoes
till golden
Crackle some cumin
add the pureed in that
cook till oil separates
add in spice powders and salt
mix well
add some water and mix well
add in fried potatoes and ladysfinger
mix well
cook till oil separates
Serve

    bhindi is one sabzi u need to keep it bit crisp or it wud look more slimy hehe.. this is new variation and i love it

    Aloo Bhendi masala looks good. Nice recipe. For some reason we do not cook bhendi with any other vegetable. It is always bhendi fry or bhendi in tamarind gravy or in sambar.
