Beetroot Kheer Recipe – Beetroot Payasam Recipe

This is a easy and delicious kheer made using beetroot, dal, jaggery and coconut milk. I specially love the colour of the kheer. Great for any parties or occasions.

Preparation Time : 10 mins
Cooking Time : 30 mins
Serves: 4


Ingredients:

Beetroot – 1 large grated
Moong Dal – 1/2 cup
Ghee – 1 tblspn + 1 tblspn
Jaggery – 1 cup or as needed
Water – 2 cups + 1/2 cup
Thick Coconut Milk – 2 cups
Cardamom Powder – 1 tsp
Cashews and Dried Fruits – 3 tblspn

Method:

Soak moong dal for 15 mins. Drain and set aside.

Take jaggery and 1/2 cup of water in a sauce pan, heat till it is melted. drain and set aside.

Take ghee in a pan, add beetroot and dal and roast for 2 mins.

Add in water and cook till it is completely done and water is all dried up.

Now add in jaggery water and cook well.

Add in coconut milk and mix well. Simmer for 5 mins.

Add cardamom and mix well.

Heat ghee in a small pan, fry nuts and dry fruits. Pour this over the kheer and mix well.

Serve.

grate finely
heat little ghee in a pan
add beetroots
add dal
mix well..stir fry for 5 mins
add water
cook till dal is done and water is dried up
add jaggery water
cook till it thickens
like this
add coconut milk
cardamom powder
simmer for few mins
heat ghee in a pan
add nuts
fry till golden
add to kheer
mix well
serve
