Hope everyone is enjoying a bright colourful festival. We made pidi kolukattai, panchamirtham and appam for karthigai deepam. Just finished doing all poojas. I will give you the recipes of above patchanam’s soon.
I was planning to post some recipes for karthigai deepam, but I couldn’t find time to make it in advance. So here I am with a wonderful payasam recipe for you. This is a yummy desert to have after a meal or for parties. A rich desert that is very simple to make.

About Rava Payasam
Payasam (kheeri, payesh, Kheer , or phirni) is a sweet dish and type of wet pudding popular in the Indian subcontinent. It is typically made by boiling milk, sugar or jaggery, and rice, though rice can be substituted with daals, bulgur wheat, millet, tapioca, vermicelli, or sweet corn. It is commonly flavoured with desiccated coconut,
cardamom, raisins, saffron, cashews, pistachios, almonds, or other dry fruits and nuts, and pseudograins have recently gained popularity. Its usually served as a dessert.
Rava Payasam, also known as Sooji kheer, is a quick, easy, and delicious pudding made with Sooji, milk, nuts, and cardamom powder. Its is a Special dessert recipe made on the occasion of Karthigai Deepam and Diwali .
Ingredients for Rava Payasam
Sooji / Rava / Semolina :
Suji, also known as semolina, has been a staple in Indian cuisine for centuries. Semolina, which is made from coarsely ground whole wheat, is widely used in South Indian cuisine. This coarsely ground grain is used in a variety of sweet and savoury dishes.
Cashews :
Cashews contain a lot of starch, which will thicken sauces just like flour and potatoes do. The use of cashews over flour, for example, has the advantage of adding a lot of flavour to the Kheer.
Milk:
Milk serves several purposes in baked goods. It provides liquid to hydrate the dry ingredients, adds flavour, aids browning, and softens texture.

Ingredients
- ½ cup Sooji
- 1 litre Milk
- 1 cup Sugar
- 3 tbsp Sweetened Condensed Milk
- 1 tsp Cardamom powder
- 2 tbsp Cashews
- 2 tbsp Raisins
- 3 tbsp Ghee
Instructions
- Heat ghee in a kadai.. Add cashews and raisins in it and fry till golden. Remove this and set aside.
- Now in the remaining ghee add rava and fry for 3 mins till nice aroma comes out.
- Pour milk in this and mix constantly so that no lumps are formed.
- Now bring this to a boil and cook for 10-15 mins.Add crushed cardamom and mix well.
- Now add in sugar and condensed milk and mix well. Cook this for 5 mins.
- Add in fried cashews and raisins and mix well.
- Serve and enjoy.

Take all your ingredients |
fry cashews and raisins in ghee |
till it turns golden |
remove and set aside |
in the remaining ghee |
add sooji |
and fry till light golden |
add milk in this |
and mix well |
add cardamom in |
and cook well |
it will get thicker as it cooks..you can add some more milk and adjust the consistency |
now add sugar in this |
and mix well |
add milkmaid in this |
and mix again |
add the roasted nuts back in |
give it a mix |
and serve |
