Best Peanut Butter Cookies Ever

I always wanted to have a fool proof best peanut butter cookies on my repitore. I have made a eggless version of peanut cookies which i am not much satisfied with. This one has become my all time favourite. It was soft, chewy and really yummy.

It is pretty easy to make and tasted so yummy. I can taste the peanut butter flavour and everyone in the family loved it so much. I actually made this for my little niece and nephews. They loved it so much which made me so happy.

Preparation Time : 10 mins
Chilling Time : 2 to 3 hours
Baking Time : 10 to 15 mins
Makes : around 25 to 30 cookies

Ingredients:

All Purpose Flour / Maida – 1 1/4 cup / 150 grams
Sugar – 1/2 cup / 100 grams
Brown Sugar / Jaggery – 1/2 cup / 90 grams
Unsalted Soft Butter – 1/2 cup / 1 stick
Peanut Butter – 1/2 cup ( I used crunchy peanut butter)
Egg – 1
Baking Powder – 1/2 tsp
Baking Soda / Cooking Soda – 3/4 tsp
Salt – 1/2 tsp


(My 1 cup measures 240 ml)


Method:

Preheat oven to 190 degree C or 375 degree F. Line a baking sheet with parchment paper and set aside.

Take soft butter in a bowl and cream it well. Add in both the sugar and cream till fluffy.

Add in egg and peanut butter and cream again.

Now add in the flour mix and mix really well.

Put the bowl in fridge for 2 to 3 hours or in freezer for an hour.

Now take it out and take a small portion of dough, roll it into smooth ball.

Arrange it in the tray and use a fork to make criss cross pattern.

Now bake this for 9 to 15 mins depending on the size of cookies you make. I used around 2 tblspn of dough and baked it for around 12 to 13 mins.

Now remove it and cool it down for 5 mins. Now remove it to a wire rack and cool completely.

Store in a air tight container and enjoy with some milk.

Line a baking tray with parchment and set aside
Take all your ingredients
take flour in a bowl
Add in salt
add in baking soda and baking powder
mix well and set aside
Take butter in a bowl
cream it well
add in brown sugar..i used jaggery / palm sugar in this
add in sugar
cream well
now take your peanut butter..i used chunky ones
measure 1/2 cup of it
add in 1 egg
cream well
Add in flour mix in
mix well
give a good mix using spatula..now refrigerate this 
mix for 2 to 3 hours
Now it is chilled
take a small portion of dough
roll it
place it in a baking pan
use a fork to mark criss cross impressions
now time to bake
bake till golden
cool it on some wire rack
done

    Can we use salted butter and omit salt from the recipe ?Is chilling of prepared dough is necessary for the above recipe ?

    What else can we use in place if butter? Olive oil?

      oil may affect the texture a little. but you can use
