    Chapati Noodles – For Left Over Chapati / Lunch Box Recipes

    My system got totally sick yesterday and I couldn’t update anything.  It got fixed just now and I am ready with my post for today.

    I made this recipe a while back and just now got time to post it. Many of you have been asking me to post recipe to put in lunchbox for kids and I can tell you this is perfect for that.This is a great recipe for leftover roti or chapati. I used my only carrot in this, but you could use any of your favorite vegetable like capsicum and cabbage.

    So here you go to the step by step recipe with pictures.


    Ingredients:

    Chapati- 6 cut into thin strips
    Onion- 1 large finelt sliced
    Tomato-3 chopped finely
    Carrot-1 cut into lengthwise
    Green chilli-2
    Soy Sauce-1 tblspn
    Coriander Powder / Malli – 1 tblspn
    Chilli Powder-1 tsp
    Turmeric Powder / Manjal Podi-1 tsp
    Garam Masala Powder-1 tsp
    Salt to taste
    Coriander leaves / Cilantro  for garnishing
    Oil – 1 tblspn


    Method:

    Heat oil in a wok or kadai. Add onions and green chilli and fry for 3 mins.

    Add carrots and cook for 5 mins till they are half cooked.

    Add tomatoes..Cook this till it turn mushy, it will take around 5 mins.

    Season with salt, Add all spice powders and mix well.

    Add some soy sauce and mix well. Now add in cut up chapatti and mix well.

    Garnish with cilantro and serve hot or put in lunch box.

      This is very similar to a popular street food in Sri Lanka called Koothu, where they stir fry strips of roti with chile, onions, etc. The vegetarian version they add grated coconut..it is delicious, as I'm sure this is.
