    Coconut Rice Recipe with step by step pictures. Thengai sadam is made with rice, coconut and spices. This recipe makes perfect lunch box recipe.

    Coconut Rice Recipe

    I love coconut rice. Amma makes it often for lunch on weekdays, since it is so easy peasy to make..Actually it taste so great as it is..So you don’t need any side dish with this..If you want some thing to go also with this, you could make Potato Roast.

    But the best combo for this is spicy chicken curry. They both taste divine. I think you should try it some day. The flavour of this rice comes from the toasting of coconut in coconut oil and also the whole spices which you put in. I added some cashews for little crunch..I have another version of Coconut Milk Rice which is a keralan style. Check it here.

    Ingredients for Coconut Rice

    • Rice – 3 cups cooked
    • Coconut -1 cup Freshly Grated
    • Coconut Oil – 2 tblspn
    • Curry leaves – 2 springs
    • Cashews – 10
    • Channa Dal / Kadala Paruppu – 1 tsp
    • Whole Pepper -1 tsp
    • Urad Dal / Ulundu – 1tsp
    • Mustard Seeds / Kaduku -1 tsp
    • Cardamom – 5
    • Dry Red Chilli – 3
    • Salt to taste

    How to Make Coconut Rice

    1. Heat Coconut oil in a kadai. Add Mustard Seeds, Urad dal and Saute for a min.
    2. Add Channa Dal, Pepper, Cashews, Cardamom, Dry Red Chilli and Curry leaves. Saute this for 30 sec.
    3. Add in Coconut and mix well. Add some salt and sauté till it gets light golden.
    4. Now add in rice and mix well..Fry this for 3 mins until the rice is heated through.
    5. Serve hot or put in lunch box.

    Ingredients

      Here 1cup means is it 200ml or 100ml? also lemme know quantity mentioned is for cooked rice?
