    Baby Potato salad is a creamy, tangy that is loved by everyone. It is made with baby potatoes tossed in a smooth mayo mustard dressing. The mayonnaise adds richness, while the mustard sauce, garlic powder and paprika gives the salad a spicy kick that makes every bite flavourful. Whether it's for a barbeque party, picnic or for a quick dinner, this salad is a good and tasty choice. 

    Potato salad is one of my favourite dish to make for my kids lunchbox. Not only it is tasty but it is very easy to put together and it stays fresh till lunchtime. I can make the salad a day in advance and store it in fridge and enjoy it whenever I want.

    I'm a huge fan of anything that is made with potatoes like cajun potato, potato fry, potato cutlet, french fries, aloo ( potato ) paratha, mashed potato and the list goes on.

    And this baby potato salad has become one of my go-to recipes because it comes together quickly in a bowl and it just tastes absolutely amazing. 

    About Baby Potato Salad Recipe

    Baby Potato salad is one dish which is filling, tasty and healthy as well. I didn't vegetables like cucumber, celery, bell peppers makes the salad even more healthy. You could even add boiled eggs in the potato salad.

    This salad is a must make recipe for any parties or get-togethers. You could customise this salad dressing however you like. Some of the variations or mentioned in this blog post kindly check that.

    I usually make salads to serve along with meals because they make a satisfying and complete meal. This one is a bit more filling and delicious than the others, because of its creamy mayonnaise and tangy mustard sauce dressing.

    The best part is that the recipe takes around 30 minutes to make and uses basic ingredients like potato, mayonnaise, garlic powder, paprika, mustard sauce and honey. The potatoes get coated in a light, flavourful dressing that is tangy, creamy and perfect in every bite.

    I like using my homemade mayonnaise, but any good quality store bought mayo also works perfectly. This baby potato salad with mayo and mustard dressing is an easy, comforting, flavourful and crowd pleaser recipe.

    Serve it with sandwiches, wraps, burger, barbeque, grilled meat and vegetables or simply enjoy on its own, it will never disappoint your taste buds !

    Ingredients

    Baby potatoes - This is the star ingredient of the salad. Baby potatoes hold their shape well after boiling and they naturally make your salad creamy and slightly sweet. You can substitute it with yukon or king russet potatoes. 

    Mayonnaise - Mayonnaise is the main sauce that gives the salad its rich, creamy base and helps to bind all the ingredients together. It also adds smoothness to the base. You can swap it with eggless mayo, greek yogurt or sour cream. 

    Mustard sauce - Mustard sauce has a sharp, tangy flavour that balances well with creamy mayonnaise. Use dijon or yellow mustard sauce for best taste and flavour. 

    Spices - Garlic powder adds a gentle flavour to the salad without overpowering. You can also use freshly minced garlic, roasted garlic as an alternative. 

    Honey - Honey is a natural sweetener that balances the tanginess of mustard sauce and enhances the overall flavour of the salad. You can replace it with maple syrup, sugar or agave. 

    Spring onions - Spring onions have a mild onion flavour that adds freshness and crunchiness to the salad. You can substitute it with finely chopped shallots. 


    Step by Step Pictures

    1)Take mayonnaise and dijon mustard in a bowl.

    2)Add in paprika, garlic powder into the mayo.

    3)Add in honey or maple syrup.

    4)Mix well until creamy sauce is formed.

    5)Add in halved boiled baby potatoes into the salad dressing.

    6)Toss well in the creamy dressing.

    7)Garnish with either chives or spring onions. Mix once and serve.


    Expert Tips

    • Boil the baby potatoes until tender but still firm so that they hold their shape well in the salad. 
    • Cool the potatoes completely before adding the dressing.
    • Gently mix the ingredients together using a spoon or spatula. Don't over-mix. 
    • Add fresh herbs like parsley, chives or dill for an extra burst of flavour.
    • Add roasted nuts or seeds for a crunchy texture. 
    • Serve this potato salad on a bed of lettuce for that crunch and an appetizing look. 

    Storage & Serving

    Store the leftover potato salad in an airtight container and it stays good in the refrigerator for 2 to 3 days. 

    Serve this potato salad as a side for grilled vegetables, meats ,sandwiches, burger, or wrap. Sprinkle some fresh herbs, paprika or chilli flakes before serving for extra flavour. 


    FAQ 

    Q. Should I peel the potato skin or keep it on ? 

    It's totally up to your choice. Peel them if you like to have a smooth, classic salad or keep the skin on for a rustic, texture look. Anyway both will taste absolutely delicious. 

    Q. Can I make the salad with other dressing ? 

    Absolutely ! You can use other dressing like lemon, olive and mint dressing, vinegar based dressing, caesar salad dressing of your choice. 

    Q. Is potato salad healthy ?

    Yes, it is a nutritious and healthy salad. You can even make it healthier by adding other vegetables, light dressing, using eggless or vegan mayonnaise. 

    Q. Can I use other types of potatoes ? 

    Yes ! Potatoes like red potato, yukon gold or king russet works best.

    Ingredients
      

    • 500 grams Baby Potatoes
    • ½ cup Mayonnaise
    • 2 tablespoon Mustard Sauce
    • 2 teaspoon Garlic Powder
    • 1 teaspoon Paprika
    • 2 tablespoon Honey
    • 3 no Spring Onions Chopped finely

    Instructions
     

    • Boil small potatoes in salted water till potatoes are tender. Drain the potatoes. Peel the skin and cut it in half. Set aside.
    • Take mayo, mustard, garlic powder, honey, paprika and mix well. Add in boiled halved potatoes and toss well. Add spring onions and serve.

    Notes

    • You can use regular size potatoes but make sure you cut it into bite size pieces.
    • Fresh garlic can be added in the dressing instead of garlic powder.
    • Vegetables like cucumber, celery, bell peppers, onions can be added in the potato salad.
    • Use waxy new potatoes for Best taste.

    Variations

    You could add any ingredients and customise this salad according to your taste. Some of my preferred choices are mentioned below.

    This salad dressing can taken a little bit of sweet relish, hot sauce, sour cream, cream cheese or a drizzle of fresh cream.
