Eggless Strawberry Cake Recipe

I love baking with berries, specially strawberries. I have baked few cakes and cupcakes using strawberries. I wanted to share a basic eggless strawberry cake recipe for a long time. I made it few days back and the cake was a super hit.

Preparation Time : 10 mins
Baking Time : 25 to 30 mins
Serves: 4 to 6

Ingredients:

All Purpose Flour / Maida – 3/4 cup (90 grams)
Sugar – 1/2 cup (100 grams) powdered
Oil – 1/4 cup (60 ml)
Yogurt – Curd – 1/4 cup (60 ml)
Baking Powder – 1/2 tsp
Baking Soda / Cooking Soda – 1/4 tsp
Salt a pinch
Strawberries – 1/2 cup pureed
Any Frosting of your choice as needed

( I used cream cheese frosting, Recipe here)

(My 1 cup measures 240 ml)

Method:

Grease a 8 to 10 cm cake pan with oil and dust with flour. Set aside. Preheat oven to 180 degree C.

Take all purpose flour, baking soda, baking powder and salt in a bowl and mix well. Set aside.

Take strawberries in a blender and puree till smooth. Set aside.

Take sugar, oil, yogurt in a bowl and mix well till creamy.

Add in strawberry puree and mix well.

Add the flour mix and fold gently. Spoon this into the cake pan and bake for 20 to 25 mins.

Remove from oven and cool completely.

Now slice them in half and decorate with your favourite frosting.

Serve.

take all your ingredients
take a cake pan, grease well and dust with flour
take strawberries in a blender

take flour in a bowl
add baking powder
add baking soda and salt
mix well
take powdered sugar in a bowl
add yogurt
add oil
mix well
now it is combined
add strawberry puree
mix well
add flour mix
mix gently
i added few pink colour for more vibrant cake
spoon the batter in cake pan
bake till done
remove it and cool completely
slice in half
dollop your favourite frosting..i used cream cheese frosting
spread evenly
top with other half
cover completely
Serve

    I tried this cake. But it didn’t cooked after 25 minutes. What should be the mistake I made? If I missed anything you can figure out please let me know. I love baking. Need some guidance.

      you can cook longer. each oven will vary. if it is getting too dark in the top, cover the top with foil and continue cooking

    Hi. If I want to use store bought strawberry crush which already has sugar in it I believe. Then what amount of sugar I should use in the cake??

      u can reduce the sugar level accordingly. try reducing it by half

    What a great recipe! Two questions though, can one use strawberry jam instead of the strawberry pulp? Also, can one replace the sugar with Sugar-free Natura powder?

    You have mentioned 1 cup means 250 ml(that means 250 gram). so in the recipe you have used 3/4 cup. how it will be 90 grams then?I measured maida in 90 ml cup.and cake is so small
