    Ellu Sadam / Sesame Seed Rice / Til Rice - Navaratri Recipes

    During navaratri days, amma makes variety rice on each day and this recipe is one of them. I love the flavour of this rice, since it has peanuts they taste awesome. I used black sesame seed in the rice, so the colour is so black but you could use white.

    Preparation Time : 30 mins
    Cooking Time : 20 to 25 mins
    Serves : 3 to 4


    Ingredients:

    Rice - 1 cup
    Salt to taste


    For Sesame Powder:
    Oil - 1 tsp
    Roasted Peanut - 2 tblspn
    Sesame Seeds / Til / Ellu - 6 tblspn
    Dry Red Chilli - 3
    Coconut - 2 tblspn
    Asafoetida / Hing / Kaya Podi - ½ tsp


    For Seasoning:
    Oil -  1 tblspn
    Mustard Seeds / Kaduku - 1 tsp
    Cumin Seeds / Jeerakam - ½ tsp
    Curry leaves - 1 spring


    Method:

    Take
    1 cup rice in a pressure cooker, cover with 2.5 cup of water and
    pressure cook rice for 2 whistle and simmer for 5 mins. Switch off the
    flame and let the steam go all by itself. Now fluff the rice with fork
    and allow it to cool down.

    Start by making sesame seed powder. Heat oil and add in sesame seeds and toast them for a min. Now add in peanuts and fry them for 30 sec till they are light golden. Now add in dry red chilli, coconut and asafoetida, Fry them together for couple of mins. Once everything is nice and toasted, take them in a blender and make into a rough powder.

    Now heat 1 tblspn oil and add the seasoning ingredients, let them splatter for a min.

    Add in rice and salt mix well.

    Add in sesame seeds powder and mix well.

    Once everything is heated through. Turn off the heat and serve.
