Grilled Corn, Spinach & Cheese Sandwich Recipe – Sweet Corn & Spinach Sandwich Recipe

You can know i love making sandwiches. I should probably do a collection of my sandwiches in one post, will do it this weekend..Now this is another addition to my sandwich list. It is made with spinach, corn & cheese. These are the best combination ever in a sandwich, pasta or pizza.

I grilled this sandwich, because i am sucker for those grill marks on my foods. Somehow it makes it so appetizing and appealing. So i am grilling my food a lot recently. This sandwich is so healthy, you can pack this in your kids lunch box, they will love it for sure..

Preparation Time : 10 mins
Cooking Time : 20 mins
Serves : 2

Ingredients:

Bread Slices – 4 to 6
Oil – 1 tblspn
Spinach – 1.5 cup chopped finely ( I used palak)
Sweet Corn – 1/2 cup ( I used frozen)
Butter – 1 tsp
All Purpose Flour / Maida – 2 tsp
Milk -1/2 cup
Chilli flakes a pinch
Oregano a pinch
Salt to taste
Cheese – 1/2 cup grated
Oil for toasting bread

Method:

Heat oil in a pan, add in corn and spinach, saute well for 5 mins or so.

Add in butter and when it starts to melt, add in flour and mix that well with the corn and spinach. 

Now add in milk and mix with the spinach corn. Toss well.

Sprinkle little chilli flakes, oregano and salt. Toss well. Now the filling is done.

Take a bread slice, spoon some filling in and spread it out. Now sprinkle some cheese over it and cover with another bread.

Oil a grilling plate well.

Place it on a heated grill pan and drizzle some oil over it and grill till golden.

Remove it and cut into wedges.

Serve.

Take all your ingredients
Heat oil in a pan
add in little sweet corn
add in chopped spinach leaves
saute well
cook till spinach is wilted
toss well
add in little butter
add in flour
mix that well with the corn and spinach
add in little milk
mix well
sprinkle little salt, chilli flakes and oregano
mix well
now the filling is done
take few bread slices
spoon the filling in
spread it evenly
sprinkle some cheese over it
cover with another bread
place it in a grill toaster, oil the grill plates before putting it
drizzle the top with oil
grill them
remove it
cut into triangles and serve

    I tried this today. Turned out yummy !

    Hi Aarthi, thank you for sharing this delicious recipe and I must say with some modifications of my own like cream (instead of Maida and milk) and English Mustard Sauce in addition, the sandwich turned out to be yummylicious!
