    Grilled Spinach Corn Sandwich Recipe

    Grilled Corn Spinach Cheese Sandwich Recipe, is made with bread slices that are stuffed with a cheesy filling made from boiled corn and chopped spinach. Easy to make, with simple filling and taste great for lunch box.

    Grilled Corn Spinach Cheese Sandwich

    You can know I love making sandwiches. I should probably do a collection of my sandwiches in one post, will do it this weekend.

    Now this is another addition to my sandwich list. It is made with spinach, corn & cheese. I never thought spinach would taste this good in a sandwich which is the best combination ever in a sandwich, pasta or pizza. 

    About Corn Spinach Cheese Sandwich

    Corn spinach sandwich is made with a sweet corn, chopped spinach, cheese which taste amazing when stuffed between bread slices. This is a great recipe to make for your picky eater, who hates spinach.

    The combination of sweet corn, spinach and cheese is best in a sandwich. I added little bit of butter and plain flour after the veggies are sauted to make the creamy sauce.

    Once the milk is added, the vegetables turn into a creamy filling. This recipe is great to try with any veggies as you like.

    Ingredients

    • Bread slices - you can use white bread or brown bread in this sandwich. Both works great.
    • Spinach - I used palak for this sandwich. you can use any variety that you have.
    • Sweet corn - fresh corn kernels or frozen sweet corn can be used.
    • Mozzarella Cheese - grate your cheese before adding in the sandwich so it melts easily.
    • Butter - This is used to create the creamy texture. You can use olive oil instead of butter
    • Plain Flour - helps create the thick creamy sauce.
    • Seasoning - herbs, dried chilli flakes and salt adds flavour.

    Step by Step Pictures

    Make Filling

    1)Heat oil in a pan. Add in sweet corn into the oil. You can add some crushed chopped garlic which adds flavour.

    2)Add in chopped spinach into the corn. I used palak leaves, you can use any variety of spinach that you have on hand.

    3)Saute the corn and spinach in the oil until it wilts. It will take around 4 to 5 minutes.

    4)Now lets make the creamy sauce. For this add in butter into the corn and spinach.

    5)Once the butter starts to melt, add in plain flour into the butter. Instead of plain flour, you can use wheat flour also.

    6)Saute the flour into the butter and the vegetables. Stir fry for 2 minutes. The raw smell should leave from flour.

    7)Now pour the milk into the vegetables and mix well. cook till thickens. It will start to thicken immediately.

    8)Add in red chillies, dried herbs, salt. Mix well into the filling.

    9)Cook until the mix gets thick like this. The creamy filling is ready. You can taste and adjust the seasoning.

    Assembling Sandwich

    10)Take bread slices, spread the filling over the bread. Don't over fill, just a layer is enough so the bread doesn't get soggy.

    11)Top with grated cheese. I used ¼ cup of grated mozzarella cheese for one sandwich. You can use cheddar cheese also.

    Grilling Sandwich

    12)Place another bread on top of cheese. Brush oil or butter on the toaster. Place sandwich on the butter. Drizzle with oil or butter generously. Cover and cook.

    If you don't have toaster, you can use a skillet or grill pan.

    13)Cook until golden brown on both sides. Remove carefully and allow to cool a bit before cutting into pieces.

    14)Cut into diagnols and enjoy.

    Equipment

    Grill Toaster or Grill pan
    Skillet

    Ingredients
      

    • 8 slices Bread
    • 4 tablespoon Oil or Butter for toasting bread
    • 1 cup Mozzarella Cheese

    For Filling

    • 1 tablespoon Olive Oil
    • 2 cups Spinach I used palak (chopped finely)
    • ½ cup Sweet Corn I used frozen
    • 1 tablespoon Butter
    • 1 tablespoon All Purpose Flour (Plain Flour)
    • ½ cup Milk
    • 1 teaspoon Dry Red Chilli flakes
    • 1 teaspoon Dried Oregano
    • 1 teaspoon Salt to taste

    Instructions
     

    • Heat oil in a pan, add in corn and spinach, saute well for 5 mins or so.
    • Add in butter and when it starts to melt, add in flour and mix that well with the corn and spinach. Saute this for 2 minutes until raw smell leaves.
    • Now pour in milk and mix with the spinach. Sprinkle little chilli flakes, oregano and salt. Toss well. Now the filling is done.
    • Take bread slices, spoon some filling in and spread it out. Now sprinkle ¼ cup of cheese over it and cover with another bread. Brush top with oil or butter.
    • Take a toaster, grease grill plate with oil or butter. Place bread on it. Place it on a heated grill pan and drizzle some oil over it and grill till golden. Remove it and cut into wedges. Serve.
