    Chicken sandwich is a delicious and popular sandwich which is loved all around the world. This recipe uses mayo as base with added vegetables for nutrients. The filling is so versatile, you can use it in wraps, toasted bread, serve as salad or filling for lettuce wraps. Learn how to make delicious chicken sandwich with step by step pictures and video. 

    Chicken sandwich 

    One of my favourite sandwich is chicken sandwiches. This is my go-to sandwich in cafe and coffee shops. I used to wonder how the chicken filling used in cafe sandwiches taste so thick and creamy. Over the years of many trials, I have found the perfect trick to get cafe like sandwiches at home. Read this entire post to know how to make the perfect chicken sandwich.

    This is one sandwich which I make whenever I am busy and don’t have much time to pack school lunch box. You can make the filling a day ahead and store in fridge. It has a mayonnaise as base and taste amazing when served cold or at room temp.  You can toast the bread if you want, but I had some soft bread slices on hand so I used it without toasting. 

    About Chicken Sandwich 

    Chicken sandwich can be made hundreds of ways. Each region has a special chicken sandwich recipe. It is one of the most preferred and popular sandwich which is loved by many. Making a good chicken sandwich is easy but making it extra ordinary needs some skills and tricks which I have shared in this post. 

    This sandwich is also known as chicken mayonnaise sandwich or chicken mayo sandwich. It is a cold sandwich which requires no heating, so it is great to put in lunch box or perfect when travelling. The filling can be made upto 3 days in advance and stored in fridge. The filling uses cooked shredded chicken, vegetables of choice, herbs, seasonings, mayo and cream.

    Chicken Sandwich Ingredients

    Bread - use the softest bread you can find to make this sandwich. White bread is the preferred bread of choice, but you can use whole wheat bread, multigrain bread. You can toast the bread or leave it un toasted. 

    Chicken - I used boneless chicken breast in this recipe, boil the chicken and then shred them fine. I used a chicken shredder for this, but you can add the cooked chicken breast in a food processor to shred. The main trick is to get the cooked chicken in fine shreds which evenly mixes with the mayo. 

    Vegetables - I used a combination of cabbage, bell pepper, celery, green onions to add crunch to the filling. You can use carrots, boiled potatoes or corn in this too. 

    Mayonnaise - store bought mayo or homemade mayo can be used. In this recipe, I used eggless mayo in this recipe. 

    Cream - even though this is optional, a drizzle of cream lighten the mayonnaise and adds rich creamy flavour. 

    Spices and seasonings - I used garlic powder, black pepper, salt and sugar for seasoning. 

    Herbs - fresh herbs add refreshing taste to the filling. Some of the herbs I prefer to use are fresh parsley, coriander leaves and dill leaves. 

    lemon - I add a drizzle of lemon juice in the filling for fresh refreshing taste. 

    Lettuce - I used lettuce over bread, so the filling doesn’t make the bread soggy. 

    My Tips for Best Chicken Filling for Sandwich

    Using right bread - use the softest bread you can find to make this sandwich. White bread is the preferred bread of choice, but you can use whole wheat bread, multigrain bread. You can toast the bread or leave it un toasted. 

    Shredded chicken - for best chicken filling,  shred the chicken very fine. So the chicken incorporates with the creamy mayo better.  Use chicken breast which is easy to shred. You can use food processor, hand mixer, blender or chicken shredder to shred chicken finely. 

    Choosing Mayonnaise- use good amount of mayonnaise to the filling. Adding cream lightens the mayonnaise and create extra creamy texture. 

    Don't Skip Crunchy vegetables - vegetables like cabbage, celery and bell peppers add crunch to the filling. 

    Optional - you can add raisins, chopped toasted walnuts, almonds, grapes in the filling for sweet surprising texture. 

    How to Make Chicken Sandwich (Stepwise Pictures)

    Cooking Chicken

    1)Take water, salt and black pepper powder in a cooking pan.

    2)Bring it to a full boil, add in chicken breast and lower the heat low. Cook covered on low heat for 8 to 10 minutes until the chicken is cooked completely.

    3)Remove the chicken from the pan and allow it to cool briefly.

    4)Now take the cooled chicken breast, you can shred it finely using food processor or blender or use chicken shredder.

    5)Make sure to shred the chicken fine. Set this aside till use.

    6)Reserve cooking liquid for making soups. This is your chicken stock.

    Make Chicken Filling

    7)In a bowl, add mayonnaise and cream.

    8)Add in salt, sugar, garlic powder and pepper. Mix well.

    9)taste this and adjust the seasonings.

    10)Add all vegetables, coriander leaves.

    11)Add in cooked shredded chicken into this mixture.

    12)Add some lemon juice to brighten the taste.

    13)Chicken filling for sandwich is ready.

    Assembling sandwiches

    14)Take bread slices, lettuce and chicken filling for assembling sandwiches.

    15)Now take bread slices, I am using soft white bread so I didn't toast the bread. If you want you can toast the bread.

    16)lay some lettuce leaf on top, this prevents the bread from getting soggy.

    17)Spoon generous amount of the filling.

    18)Cover with other bread.

    19)Cut into diagnols and enjoy,

    20)Delicious chicken sandwiches is ready.

    Expert Tips

    • Make sure to use soft bread for this recipe. If you are using old bread, make sure to toast them before using. 
    • You can use homemade or store bought mayonnaise. Eggless mayo can be used. 
    • Cream is optional and can be skipped. You can use a dollop of sour cream instead. 
    • Taste and adjust seasoning for the filling. 
    • Make sure the chicken is in fine shreds which combine with the filling better. 
    • You can add chopped dill if u like the flavour. 
    • Sweetcorn, carrots, grapes, walnuts and raisins can be added. 

    Storage and serving

    Leftover filling can be stored in fridge for upto 3 to 4 days.

    Equipment

    • Cooking pot
    • Food processor or Meat shredder to shred chicken

    Ingredients

    • 8 slices White Bread
    • Lettuce as needed optional

    For Filling

    • ½ cup Mayonnaise
    • 3 tbsp Cream
    • 1 tsp Salt
    • ½ tsp Black Pepper powder
    • 1 tsp Sugar
    • 1 tsp Garlic powder
    • ¼ cup Cabbage chopped finely
    • ¼ cup Bell pepper chopped finely
    • ¼ cup Celery chopped finely
    • 2 no Green onions chopped finely
    • 4 tbsp Coriander leaves chopped finely
    • 1 tsp Lemon juice

    For chicken

    • 2 large Boneless Chicken Breast
    • 2 cups Water
    • ½ tsp Salt
    • ½ tsp Black pepper powder

    Instructions

    • Now in a bowl, take mayo, cream, salt, sugar, garlic powder and pepper. Mix well. Add all vegetables, coriander leaves, cooked chicken and lemon juice. Mix well, your filling is ready.
    • Now take bread slices, place lettuce leaf on top, spoon some chicken filling on the lettuce and cover with other slice of bread. Cut into diagonals and enjoy.
