    Spiced Potato Fry

    I love gujarati food so much, they have lots of flavours in their dishes. I am planning to try out lot of gujarati dishes soon. So keep checking out. This dish is one of  Anjum Anand recipe from her book Anjum’s New Indian.

    This is perfect for a quick snack or a side dish for any meal. The key thing in this dish is when you fry the potatoes you want it to be so crispy so I fried it twice. When I fried first I used low heat so that the potatoes cook from inside. Then increase the heat to a high and fry it again, so that the potatoes gets its maximum crispness.

    Appetizer -Gujarati Potatoes with Cashewnuts

    Main Course -Pineapple Pulisery with Steamed Rice

    Desert -Carrot Halwa

    This meal is a complete one because the pineapple pulissery is a mild flavourful curry so it accompanies this spicy potato dish. Then to finish the meal a bowl full of carrot halwa will do. I will post the recipe for that halwa soon. So hope you all will give it a try and let me know what you think.

    Ingredients
      

    • Potatoes-2 large cut into sticks
    • Cashew-½ cup
    • Garlic-6 cloves
    • Red chilli powder-1 tsp
    • Turmeric powder-½ tsp
    • Cumin seeds-1 tsp
    • Sesame seeds-1 tblspn
    • Dry red chilli-2
    • Chat masala-1 tsp
    • Sugar-1 tsp
    • Salt to taste
    • Oil-for deep frying+1 tblspn

    Instructions
     

    • Heat oil for deep frying and fry the potatoes on low flame first till they are lightly coloured.Then remove it and increase the flame to a high and deep fry it agin till golden brown.Drain it and set it on a paper towel.
    • Heat oil and crackle some cumin,red chilli,garlic for 1 min till garlic get golden colour.
    • Now add in cashew and fry till golden...Followed by red chilli powder,Turmeric powder,Salt and sugar...
    • Add in the fried potatoes and toss well..Sprinkle in the chat masala and toss well..
    • Serve with rice or on its own..

      I've already made this twice. My family loves the spicy fries, and I really like the addition of cashews and garlic. I served it with pinapple pulisery, like you suggested, and it was awesome together.
