    "Karupatti Pudding Recipe with Step by Step Pictures. Palm sugar pudding is a simple yet delicious pudding made with coconut milk and agar agar"

    I came across this recipe few months back. Had bunch of karupatti on hand which was about to go bad. So decided to make a batch of agar agar or china grass pudding. This one is super easy to make. It requires a handful of ingredients which you already have on hand. The whole recipe came together in just few minutes.

    Once the pudding is done, pour it into a large mould and leave to set. Since this recipe uses agar agar, you can leave it at room temp to set. It literally takes 1 to 2 hours to set.

    What is Karupatti?

    Palm Jaggery we are calling as karupatti in Tamil is made from the extract of Palm Trees. It is cooked in a large earthernware pot for hours.. The mixture is then poured into moulds and left to set overnight.

    What is China grass made of?

    China grass or agar agar is a plant derived gelatin, which is used in making puddings, jellies and custards. Agar agar is commonly known as China grass in India. China grass is a glossy pudding which is made by mixing sweetened milk with China grass powder.

    Is China grass and agar agar the same?

    Yes both are same. So you can use anyone of both.

    Is China grass a Veg or non veg?

    China grass is derived from plants. So it is completely vegetarian.

    Can I use gelatin instead of agar agar?

    Yes you can use gelatin instead of agar agar. In which case you might need to add half the quantity of agar agar.

    How to Make Karupatti China Grass Pudding

    1)Soak china grass / agar agar in water for 15 mins.

    2)Cook karupatti/palm sugar in water till it is melted.

    3)Add soaked china grass and cook till it is melted. Strain the mixture.

    4)Add in coconut milk and flavourings.

    5)Strain the whole thing one more time.

    6)Pour it into moulds and leave it to set.

    7)Slice and serve.

    Tips & Tricks

    1. I used karupatti which is also known as palm sugar. You can use any type of jaggery as well.
    2. If you don't like the flavour of dry ginger powder, then use cardamom powder or vanilla.
    3. Instead of coconut milk, you can use regular milk.
    4. Never boil milk when added to agar agar. It may separate.
    5. Pudding can be made a day in advance and stored in fridge until serving.

    Serving Suggestions

    Karupatti pudding taste great cold. So I like to set this in fridge until serving.

    Storage Suggestions

    Karupatti pudding can be stored in a air tight container for upto a week in fridge.

    Ingredients

    • 2 cups Palm Sugar (Karupatti)
    • 1 ½ cup Water
    • 2 cups Coconut Milk
    • 10 grams Agar Agar
    • 1 tsp Dry Ginger Powder

    Instructions

    • Take china grass in a bowl. Add in ½ cup of water and let it soak for 15 mins.
    • Take karupatti in a sauce pan. Add in 1 cup water and bring it to a boil. Cook on low heat till palm sugar is completely melted.
    • Now add the soaked china grass and mix well. Simmer till agar agar is completely melted.
    • Strain this whole mixture.
    • Add in coconut milk and dry ginger powder. Mix well.
    • Pour it into moulds.
    • Leave to set in fridge till firm.
    • Cut it into pieces and serve.

    Notes

    1. I used karupatti which is also known as palm sugar. You can use any type of jaggery as well.

    Pictorial:

    1)Take china grass in a bowl.

    3)Take karupatti in a sauce pan.

    4)Cover with water

    5)Bring it to a boil.

    6)Cook till karupatti melts.

    7)Now the china grass is soft.

    8)Add it into the karupatti.

    9)Boil till it melts.

    10)place a sieve over a bowl.

    11) Now strain this.

    12)Discard the sediments.

    13)Add in coconut milk.

    14)Mix well.

    15)Add dry ginger powder.

    16)Mix well

    17)Take a serving dish.

    18)Strain it one more time.

    19)Leave it to set in fridge.

    20)Now it is set.

    21)Slice them

    22)Unmould.

    23)Serve

    24)Enjoy
