    Kashmiri Dum Aloo

    Kashmiri Dum Aloo is a very popular kashmiri dish which goes well with literally anything and everything.

    I have already made a punjabi dum aloo in this blog before. This version of dum aloo is entirely different. It is completely yogurt based and I used normal potatoes instead of baby potatoes. Still the curry turned out amazing.

    The Different step which i tried in this recipe is I smoked the curry in the end. Smoking adds a restaurant style flavour to the dish. Smoking a curry or a dish is very easy. It is not at all complicated.

    How to Smoke a Curry using Coal:

    1. Take a piece of charcoal(coal). Place it in direct flame for at least 5 mins till it gets red hot.
    2. Place the hot coal in a clean bowl or a bowl made using aluminium foil.
    3. With the help of tongs, place the bowl with the charcoal over the curry in the centre.
    4. Pour half a teaspoon of ghee onto the charcoal and cover the pan with a lid immediately.
    5. Let it smoke for about 2-3 minutes while keeping the lid on.

    How long can we smoke a dish:

    I would recommend smoking it for 2 to 3 minutes maximum. The longer you smoke, the dish gets too smoked which might add an unpleasant after taste.

    HOW TO MAKE KASHMIRI DUM ALOO

    • Peel and cube potatoes. Add it to salted boiling water and cook till potatoes is tender. Drain and set aside.
    • Deep fry the potatoes till golden brown. Drain and set aside.
    • Mix yogurt with spice powders, all purpose flour and set aside.
    • Heat oil in a pan. Add in whole spices and fry for a min.
    • Throw in onions and fry till golden brown.
    • Add in the yogurt mixture and cook for 3 to 4 mins.
    • Pour water and mix well. Bring it to a boil.
    • Simmer till oil separates from it.
    • Add in fried potatoes and mix well. Cover and simmer the flame and cook for 5 to 10 mins.
    • Now lets add smoke to the curry. Light up a charcoal.
    • Shape a foil like a cup, place charcoal in it. Add a tsp of ghee. Cover and leave it to smoke for 2 mins.
    • Now open the lid and add in coriander leaves.
    • Serve with naan, roti, or pulao.

    Ingredients

    • 4 Potatoes peeled and cubed
    • 1 cup Yogurt
    • 1 tbsp Kashmiri Chilli powder
    • ½ tsp Turmeric powder
    • 1 tsp Dry ginger powder
    • ½ tsp Garam masala powder
    • 2 tsp Fennel powder
    • 2 tsp All Purpose Flour
    • 1 large Onion chopped finely
    • 3 tbsp Oil
    • 3 Cloves
    • 2 Black cardamom
    • 2 Green cardamom
    • ½ tsp Black pepper
    • 1 Bay Leaf
    • Salt
    • Oil for deep frying
    • 2 tbsp Coriander leaves
    • 1 tsp Ghee
    • Charcoal

    Instructions

    • Add water and mix well. Bring it to a boil.

    • Now lets add smoke to the curry. Light up a charcoal.

    Notes

    1. Instead of regular potatoes, you can use baby potatoes.
    2. You can skip the smoking part of the dish if you don't like smoky flavour.
    3. This curry taste amazing with naan, roti and rice.

    2)Heat oil in a kadai. Add in potatoes and fry till golden brown.

    3)Fry till golden and set aside.

    4)Take yogurt in a bowl.

    5)Add in spice powders and all purpose flour.

    6)Mix well till smooth.

    7)Heat oil or ghee in a pan. Add in whole spices and let them sizzle.
