    Masala Vegetable Khichdi is a rice and dal dish made with lots of vegetables and a hefty amount of masalas added to make it desi style khichdi. Unlike my plain moong dal khichdi, this is spicy and more loved by the family. While this rice and dal khichdi is good as baby food.

    Khichdi is a healthy main dish for lunch. It has dal, rice in them and taste really delicious with some pickle and papad. I love it hot with a drizzle of ghee over it.

    About Khichdi

    Khichdi is a indian comforting recipe made with rice and dal. It has been declared as the national dish of india by authorities which is not confirmed yet. Khichdi is a well balanced dish made using rice and pulses specifically yellow moong dal. 

    Traditional khichdi only has rice and dal which is cooked till it is mushy, drizzled with a generous amount of ghee and served with pickle and papad on the side.

    Now khichdi is been modified for the modern taste buds by adding lots of masalas, vegetables and spices. Even khichdi is made like a indo-italian risotto in many restaurants.

    Why khichdi is comforting?

    Rice and dal cooked till mushy and served hot. The one thing you don't want to do in a khichdi is chew. So it is good for an upset tummy and make a light meal.

    Masala Vegetable Khichdi is made with lots of vegetables and masalas. Make it in a pressure cooker or instant pot for faster cooking.
     

    How to Make Vegetable Khichdi in Instant Pot

    • Wash and soak rice and dal together.
    • Set instant pot to saute mode. 
    • Heat oil, add cumin and cinnamon.
    • Add onions, ginger and garlic and saute for a min.
    • Add in tomatoes and mix well.
    • asafoetida, spice powders are added and mixed well.
    • mixed veggies are added and toss well.
    • Add in salt and water and mix well.
    • soaked rice and dal is added and bring it to a boil.
    • Cover the instant pot and set pressure cook for 10 mins. Let the pressure release by itself. Open and mix well. Add extra ghee if needed.
    • Serve with curd and papad.

    Ingredients
      

    • 2 tbsp Oil | Ghee
    • 1 piece Cinnamon
    • 1 tsp Cumin Seeds
    • 1 medium Onion chopped finely
    • 4 cloves Garlic chopped
    • 1 tbspn Ginger chopped finely
    • ½ cup Peas
    • 1 large Potato peeled and chopped
    • 1 large Carrot chopped
    • 1 large Tomato chopped finely
    • ¼ tsp Asafoetida / Hing / Kaya Podi
    • 1 tsp Chilli Powder
    • 2 tsp Coriander Powder
    • 1 tsp Cumin Powder
    • 1 tsp Turmeric Powder
    • 1 tsp Garam Masala powder
    • Salt to taste
    • 1 cup Rice
    • ½ cup Yellow Moong Dal
    • 5 cup Water

    Instructions
     

    How to Make Masala Vegetable Khichdi in Pressure Cooker

    • Wash and soak rice and dal together.
    • Heat oil or ghee in a pressure cooker, add cumin and cinnamon.
    • Add onions, ginger and garlic and saute for a min.
    • Add in tomatoes and mix well.
    • Add in asafoetida, spice powders and mix well.
    • Add veggies and toss well.
    • Add in salt and water and mix well.
    • Add soaked rice and dal and bring it to a boil.
    • Cover the pressure cooker and cook for 2 whistle. Turn the heat to low and cook for 5 mins. Turn off the heat and let the steam all escape by itself. Open the cooker and fluff the rice.
    • Serve with raita.
