I loved this kesari more than my plain ones, since the mango flavor is perfect in this and made this halwa really tasty.
Hope you will give this a try and let me know how it turns out for you..
Cooking Time : 20 mins
Serves: 3 to 4
Sooji / Rava / Semolina – 1/2 cup
Sugar – 1/2 cup to 3/4 cup
Water – 1 cup
Ghee – 1/3 cup
Ripe Mangoes – 2 peeled and cubed
Method:
Take mangoes and sugar in a blender and puree smooth.
Heat ghee in a kadai, add in cashews and fry till golden. Now add in sooji and roast it on low heat for 3 to 4 mins till it starts to smell good.
Once it is roasted, add in water and mix well. Cook till it thickens.
Now add in mango puree and mix well.
Cook for few mins, it should be little runny or little semi liquid. Once it is at that stage, turn off the heat and let it cool down.
Scoop and serve.
