Fruit Kesari Recipe / Mixed Fruit Kesari Recipe / Mixed Fruit & Nuts Rava Kesari Recipe

You all know my love for kesari, i have quite a few variation in my blog starting from the basic rava kesari, semiya kesari to the rich milk kesari. You can check my other kesari recipes too. This is another version of my pineapple kesari, it has a lots of mixed fruits and nuts in them. It taste simply delicious. Great for parties..So give this a try and let me know how it turns out for you..



Preparation Time: 10 mins
Cooking Time : 20 to 30 mins
Serves : 5 to 6

Ingredients:
Rava / Sooji – 1 cup
Sugar – 1.5 cup
Water – 1 cup
Milk – 1 cup
Ghee – 3 tblspn
Apples – 1/4 cup chopped finely
Orange – 1/4 cup chopped finely
Pomegranate – 1/4 cup chopped finely
Grapes – 1/4 cup chopped finely
Ripe Banana – 1/4 cup chopped finely
Badam – 10
Cashews – 10
Kishmish / Sultanas – 2 tblspn
Cardamom Powder – 1 tsp
Yellow Food Colouring a pinch

Method:
Take 2 tblspn of ghee in a kadai. Add in the nuts and kishmish. Saute till golden, drain and set aside.
Now in the same ghee add in all fruits and saute for couple of mins. 
Now in the near by stove, place a sauce pan, take milk and water in the sauce pan. Add in the sauted fruits and food colour. Bring it to boil.
Now in the kadai which you sauted fruits, There will be few drops of ghee left, if not add a tsp of ghee and add in rava and saute for 2 mins.
Now add in the boiled milk and fruit mix. Mix well. Keep stiring. It will get thick.
Once it get thick and rava is cooked, add in sugar and mix well.
Keep stiring, it will get liquidy first then it will get thick.
Once it reaches a thick stage, add in cardamom powder and mix well.
Add in 1 tblspn of ghee and mix well.
Add in fried nuts and mix.
Serve hot.

Take all your ingredients

Prepare your fruits

heat a tblspn of ghee

add the nuts and dried fruits

fry till golden

now in the remaining ghee

add in all the fruits

saute for 2 mins in ghee

while it is sauteing, take milk in a sauce pan

add in water

now add in the sauted fruits in this

add some kesari colour and bring this to a boil

Now in the same kadai, add in rava

saute for 2 mins

add in the hot fruit milk mix

mix well

keep mixing, it will get thick

now it has started to leave the sides and rava is cooked

add in sugar

mix well

now it will get thick

add in cardamom powder

some more ghee

mix well..it is done now

add in nuts

mix and cover
