    Carrot Banana Bread Recipe

    You all know my love for simple cakes and bread. This is my latest favourite. It is so simple to make and has mashed up bananas and carrots in them. They are super healthy and a slice of this bread with a cup of tea or milk is perfect.

    About Carrot Banana Bread Recipe

    This bread is a no fail recipe, the end result is so moist and light and fluffy. it has the perfect texture of the bread and it pretty easy to make. The original recipe uses all all purpose flour, but i used half plain flour and half whole wheat which gave me the perfect textured bread.

    I sliced this loaf as soon as they came out of the oven using a bread knife and the slices were very nice. I used flax seeds in this to make it more healthy but you can use any chopped nuts in this as well, or simply skip the nuts part.

    Ingredients for Carrot Banana Bread Recipe

    • All Purpose Flour / Maida - 1 cup / 120 grams
    • Wheat Flour / Atta - 1 cup / 120 grams
    • Sugar - 1 cup / 200 grams
    • Baking Soda / Cooking Soda - 1 tsp
    • Salt - ½ tsp
    • Cinnamon Powder - ½ tsp
    • Eggs - 2
    • Mashed Banana - 1 cup
    • Grated Carrots - 1 cup
    • Oil - ⅓ cup
    • Flax Seeds - ½ cup

    How to Make Carrot Banana Bread Recipe

    1. Preheat oven to 180 degree C. Grease a 9x5 inch loaf pan with oil and dust it with flour. Coat it on all sides and tap of the excess. Set aside.
    2. Take all purpose flour, wheat flour, baking soda, salt, cinnamon, carrots, flax seeds in a bowl and mix well.
    3. Now in another bowl add oil, eggs, mashed banana, sugar and mix well. 
    4. Pour the wet ingredients into the dry and fold gently.
    5. Now spoon this into the prepared loaf pan and bake for 50 to 60 mins. Insert a tooth pick to check whether the cake is done.
    6. Now remove it from oven and cool it for 10 mins in tin.
    7. Now remove from the tin and cool it completely.
    8. Slice and serve.

    Ingredients

    Carrot Banana Bread Recipe Step by Step Pictures

     
    Grease a pan with oil and dust it with flour..coat on all sides and tap off the excess..
    PREHEAT OVEN TO 180 DEGREE C
     
     
    Take all your ingredients
    Take all purpose flour in a bowl
    add in wheat flour
    add in salt and cinnamon
    baking soda
    add in grated carrots
    mix well..so carrots are coated with the flour mix
    now i added some flax seeds. you can add any chopped nuts
    toss well..set this aside
    Now take some ripe bananas in a bowl
    mash it well
    these were very over ripe so they got mashed well
    You need 1 cup of mashed banana
    add in 2 eggs
    add in sugar
    mix well
    add in oil and mix well..
    pour the wet ingredients into the dry ones
    mix well
    pour this into the prepared pan
    Bake till done..it took me around 50 to 60 mins
    Slice and serve

      Hi Aarthi. Thanks for posting such a wonderful recipe. I am pretty new to baking and the way to explain the procedure, along with pictures, it has made your blog my baking guide.

      About this recipe, you might not believe but I saw your feed around 8pm and I was like 'I have to try it today' and I am glad I did. It turned out awesome.
      Took 40 mins to bake but that's because I used small cup, around 90/100 gms.

      can we whisk the ggs along with banana/oil with sugar using a beater? had an experience of having bad smell when eggs were not beaten well. OR just a simple stir as you have done is enough (I can see you have stated "mix well" but "How" well, until frothy?
      Please advise

      is baking soda and baking powder the same? cos in our shop we get baking powder and soda bi-carb differently

      @Laviena DSouzabaking soda and baking powder is diff. Baking soda is also known as cooking soda or soda bi carb

      @Pinky Prajithyou can add 1/2 cup of thick yogurt instead of eggs, but i have never tried it

      @Supraja Muralidharanno need to get the eggs till frothy. Just giving a good mix till it is mixed well is enough. you can use beater and mix till it is combined.

      Hi Aarti, r u using a microwave or OTG for this & all recipes? as the baking time varies. Also m using OTG, do silicon tray works in OTG or I've to use a similar one shown above?

      In cake recipe can we use Amul lite instead of butter

      I found this recipe when I needed to use up some overripe bananas and several carrots - delicious and so moist! I used sunflower seeds instead of flax but otherwise kept to the recipe.
