Nadan Mutta Roast / Kerala Style Egg Roast / Egg Roast

My love for eggs never fail at all..I love to try out new recipes all the time with them. I love the fact how this simple stuff turns out so much spectacular when cooked in different ways. As a food blogger, i never cook the same recipe again and again, but some dishes takes place in our menu often. This is one kind of dish, i have cooked this more times i can think of.

I strongly recommend you to try this recipe. It has some unique flavour and taste going in this. The main flavour is because it gets roasted in oil till the outer skin of the eggs get blistered. This makes the masala which we add into this go deep inside the eggs and make it tasty. I hope you will love this and let me know what you think.
 

Preparation Time : 10 mins for cooking eggs
Cooking Time : 15 mins
Serves – 2 to 3

Ingredients:

Hard Boiled Eggs – 4

Coconut Oil – 4 tblspn
Onions – 1 large finely chopped
Curry leaves – 1 spring
Salt to taste
Ginger Garlic Paste – 1 tblspn
Chilli Powder – 1 tsp
Pepper Powder – 1 tsp
Coriander Powder / Malli Podi -1 tsp
Turmeric Powder / Manjal Podi -1 tsp

Method: 

Heat oil in a kadai. Add in cooked eggs and sear them on all sides. Remove them to a bowl and slice them in half.

Now in the remaining oil, add in onions, curry leaves and saute them till light golden.

Add in salt and mix well. Now add in ginger garlic paste and saute for a min.

Now add in spice powder and toss well with the oil.

Add in seared halved eggs and mix well with the masala.

Serve with rice. 

How to cook hard boiled eggs:

Take eggs in a sauce pan and cover with water. Bring it to a boil and cook it for 10 mins on high flame. Switch off the stove and leave it there for 5 mins. Now run the eggs under cold water and peel the skins off.

Take all your ingredients

Remove them to a bowl

Slice the eggs in half
Now in the remaining oil

Add in onions and curry leaves

Saute them till light golden

Add in salt

some ginger garlic paste

Saute them till they are golden

Add in all the spice powders

Give a good mix

Now add in seared eggs

Toss well with the masala

Serve

    I admit this is the first recipe I didn't really like. I loved the idea of pan roasted hard-boiled eggs, so I had to try it. But it seemed like the dish had too many spices and not enough full-bodied ingredients (like tomatoes or other veggies). It had this bitter and dusty undertaste that the spices have before they have a chance to slowly blend with other stuffs. I was a little disappointed, but my husband assured me that it still tasted good: "although not as good as the other curries from the Yummy Tummy lady".
