Pavakkai Fry Recipe / Bitter Gourd Fry Recipe

I always want to post more bitter gourd recipes, because it is one of the most requested recipe in my blog. I dont buy it often, i only get it occasionally. So last week when we went for shopping, i took couple of these to try this recipe and share here..This recipe is so easy to make and so delicious and crispy to eat..Love it..

Preparation Time : 10 mins
Resting Time : 30 mins
Cooking Time : 2 to 3 mins per batch
Serves : 4
 
Ingredients:
Bitter Gourds / Pavakkai – 2 large(around 4 cups sliced)
Salt – 2 tblspn
Turmeric Powder / Manjal Podi – 1 tsp
Chilli Powder – 1 tblspn
Salt a pinch
Garam Masala Powder – 1 tblspn
Gram Flour / Besan / Kadalai mavu – 1/2 cup
Rice Flour / Arisi Mavu – 1/2 cup
Oil for Deep Frying
 
Method:
Slice bittergourd into thin rounds. Now place this in a colander, sprinkle with 2 tblspn salt and turmeric powder. Mix well using your hands. Set aside for 30 mins. Now wash this really well and drain off the water.
Take this in a bowl, add a pinch of salt if needed. Taste and check for seasoning.
Add in all the ingredients except oil and mix well.
Heat oil for deep frying.
Drop this in hot oil and fry till golden. Drain and set aside.
Serve with rice and rasam.

Take few bittergourd

 

slice them thinly

 

Place that in a colander

 

Sprinkle some salt and turmeric powder

 

Massage it really well all over bittergourd..
Leave it to rest for 15 mins

 

this is how it looks after 15 mins

 

Now rinse them well and set aside so the water drains off

 

now take them in a bowl

 

sprinkle some salt, add little salt, because even after
you wash there may be some salt in the bitter gourds

 

Add in chilli powder

 

add in garam masala powder

 

now add a good amount of gram flour

 

and some rice flour

 

mix that well

 

deep fry in hot oil

 

fry till it is crispy and golden

 

drain and serve

    this recipe looks really really good. in our house, after adding the masalas, they dry up the pieces in the sun.

    Good recipe. Please let me know if its fine not to rinse bitter gourd with water after applying salt and turmeric.

    Really looking awsm…i used to mix it with saute onion after frying bitter guard…..sweetness of onions and saltness of bittergaurd makes a delicious combo….

    Cover the pan and simmer for 3-4 minutes until the bitter gourd looks well coated with all the ingredients.
