    This is one recipe which i tried it few days back and loved it. The baby corn tasted crispy and since i fried it in a tawa it is healthy. Many viewers have been asking me to share more baby corn recipes, so i decided to do a bit of them..So keep checking out guys.

    About this Recipe

    Baby corn (also known as young corn, cornlets, or baby sweetcorn) is a cereal grain made from young corn (maize) stalks. In contrast to mature corn, the cob of which is too tough for human consumption, it is typically eaten whole cob included. It can be eaten raw or cooked. Baby corn is frequently used in stir-fry dishes.

    Baby corn, which is commonly found on appetiser plates and in stir- fry recipes, is not a special variety of sweet corn. The tiny ears are the second ear from the top of regular sweet corn that has been handpicked prior to fertilisation. The top ear is left on the plant to mature to full size.

    Why do they call it baby corn?

    Baby corn has got 0% fat and is a rich source of Vitamins A and C whereas corn has 1.2 grams of fat and also is rich in vitamins A, B and E, thiamin, niacin, pantothenic acid and folate.

    Ingredients for Pepper Baby Corn Recipe :

    Baby Corn :
    Baby corn has a mild, subtly sweet, earthy, and vegetal flavour and is tender and succulent with a snap-like crunch.

    Cornflour:
    When paired with all-purpose flour, cornstarch helps prevent gluten development, which makes the flour coating crispier, and absorb moisture (from the frying and the chicken), which also means a crispier coating.

    Black Pepper :
    Peppers distinct flavour complements almost any savoury dish, as well as some sweet dishes. If salt helps to bring out flavours, black pepper makes foods more assertive.

    Ingredients

    • Baby Corn - 15 chopped
    • Cornflour - 3 tblspn
    • All Purpose Flour / Maida - 1 tblspn
    • Salt to taste
    • Pepper powder to taste
    • Oil - 3 tblspn
    • Ginger - 1 tblspn chopped finely
    • Garlic - 1 tblspn chopped finely
    • Onion - 1 medium size chopped finely
    • Curry leaves - 2 sprigs
    • For Roasting & Grinding:
    • Black Pepper - 1 tsp
    • Fennel Seeds - 1 tsp

    Instructions

    • Dry roast pepper and fennel and powder it. Set aside.
    • Take babycorn in a sauce pan, cover with water,season with salt and cook till babycorn is done. Drain and take it in a bowl.
    • Add in salt, pepper, all purpose flour, cornflour and little water and mix well.
    • Heat oil in a pan, put the babycorn in it and fry till golden brown. Remove and set aside.
    • Now heat little oil in a pan, add in ginger, garlic, curry leaves and onion and saute for a min.
    • Add in the fried baby corn and toss well.
    • Sprinkle the roasted powder and salt and mix well.
    • Serve.

    Pepper Baby Corn Step by Step

    in a small pan take pepper and fennel seeds and roast it

     

    dry roast till it gets golden

     

    take it in a blender

     

    powder them fine and set aside

     

    Chop baby corn

     

    take it in a sauce pan, cover with water

     

    add salt and cook

     

    drain and set aside

     

    take it in a bowl

     

    sprinkle it with some cornflour and all purpose flour

     

    add salt and pepper

     

    add little water

     

    mix well

     

    heat very little oil in a pan, place baby corn over it

     

    fry till golden brown..set aside

     

    in another pan, heat oil and add in ginger, garlic, onion, curry leaves

     

    mix well

     

    add baby corn

     

    toss well

     

    add the roasted and ground powder

     

    sprinkle little salt

     

    toss well

     

    serve
