    Roasted Cashew nuts or Roasted Kaju with step by step pictures. This roasted spicy cashews has spices, curry leaves added to them which makes them an addictive snack. This spicy cashews is a great snack to serve as appetizers or as a snack with drinks too.

    Indian Spiced Cashews

    Our family friend bought couple pounds of good quality cashews all the way from goa. I was thinking to make some cashew snacks using that for quite a long time. Finally couple days back i made this and a honey roasted cashews. Both of them turned out wonderful, planning to make many more flavours as well.

    About Cashews Nuts

    The cashew tree is a tropical evergreen tree that yields cashew seeds and cashew apple accessory fruit. The tree can reach a height of 14 m (46 ft), but dwarf cultivars with heights of up to 6 m (20 ft) are more profitable, with earlier maturity and higher yields. The cashew seed is commonly regarded as a snack nut (cashew nut) that can be eaten alone, used in recipes, or processed into cashew cheese or cashew butter. The nut, like the tree, is commonly referred to as cashew. Cashew allergies are caused by proteins found in tree nuts, and cooking does not always remove or alter these proteins.

    Cashews are high in healthy fats, including monounsaturated and polyunsaturated fats. These nuts are also a low-protein source. As a result, they are frequently found in the diets of vegetarians and vegans.

    Where did cashews originally come from?

    The cashew tree is indigenous to northeastern Brazil. During the late 16th century, Portuguese missionaries introduced it to East Africa and India, where it became abundant at low altitudes near the seacoast.

    Ingredients for Indian Spiced Cashews Recipe 

    • Roasted Whole Cashews - 2 cups
    • Butter or Ghee - 2 tblspn
    • Curry leaves a handful
    • Salt to taste
    • Chilli Powder to taste
    • Chat Masala Powder to taste

    Roasted Whole Cashews :
    Cashews have a rich nutty flavour that is similar to that of almonds or peanuts. When pureed, cashew butter may be difficult to distinguish from other nut butters such as peanut or almond butter.

    Curry leaves :
    Curry leaves have a similar flavour to asafoetida, another essential ingredient in cooking in places like Tamil Nadu and Kerala. It also has a more herbal flavour, similar to basil or kaffir lime.

    How to Make Roasted Cashew Nuts

    1. Heat little butter in a pan, add in cashews and toast it till golden. This has to be done on a low heat. It will take around 10 mins.
    2. Now add in curry leaves and cook till it crisp up.
    3. Take it off the heat and add salt and other spices. Toss well.
    4. Cool this down.
    5. Store in an air tight container and serve.

    Take raw cashews in a dry pan

    toast till lightly toasted..if you use already roasted ones, skip this

    melt some butter or ghee in a pan
