    Roasted Spicy Cashews Recipe

    Roasted Cashew nuts or Roasted Kaju with step by step pictures. This roasted spicy cashews has spices, curry leaves added to them which makes them an addictive snack. This spicy cashews is a great snack to serve as appetizers or as a snack with drinks too.

    Our family friend bought couple pounds of good quality cashews all the way from goa. I was thinking to make some cashew snacks using that for quite a long time. Finally couple days back i made this and a honey roasted cashews. Both of them turned out wonderful, planning to make many more flavours as well.

    About Roasted Cashews

    Cashews are high in healthy fats, including monounsaturated and polyunsaturated fats. These nuts are also a low-protein source. I enjoy a handful of cashews any time of the day. Specially if it is roasted cashews.

    Roasting cashews at home is super easy. The advantage of making roasted cashews at home is, you can customize it as per your taste. You can make it sweet like honey roasted cashews or make this spicy roasted cashews.

    Roasted Cashews Ingredients

    Whole Cashews - Cashews have a rich nutty flavour that is similar to that of almonds or peanuts. It has a slightly sweet taste to it. Try to source best quality cashews for taste.

    Curry leaves - Curry leaves add more herbal flavour, similar to basil or kaffir lime.

    Butter or Ghee - for roasting cashew, you can use either butter or ghee. I personally prefer ghee for its toasty flavour.

    Spice powders - I used chilli powder and chat masala powder for the taste.

    How to Make Roasted Cashews (Stepwise Pictures)

     

     

    Take raw cashews in a dry pan
    toast till lightly toasted..if you use already roasted ones, skip this
    set aside..
    melt some butter or ghee in a pan
    add cashews
    coat in butter
    now toast this on a low heat for 5 to 8 mins
    after it is toasted, add curry leaves
    cook till it gets crispy
    now take it off the heat, add salt
    chilli powder
    chat masala
    mix well
    done

    Expert Tips

    • You can use already roasted or unroasted cashews in this recipe.
    • Instead of using cashews, you can use almonds, pecans as well.
    • Roasted cumin powder, little black pepper powder can be used.
    • If you are using butter, make sure it is melted before adding cashews.
    • Make sure you roast cashews on low heat so it gets evenly roasted.

    Ingredients
      

    • 2 cups Whole Cashews
    • 2 tablespoon Butter or Ghee
    • 2 sprig Curry leaves
    • 1 teaspoon Salt
    • 1 teaspoon Chilli Powder
    • 1 teaspoon Chat Masala

    Instructions
     

    • Heat little butter in a pan, add in cashews and toast it till golden. This has to be done on a low heat. It will take around 10 mins.
    • Now add in curry leaves and cook till it crisp up. Now take it off the heat and add salt and other spices. Toss well. Cool this down. Store in an air tight container and serve.
