Ok here I am with my last post for this season of BM…If you miss any of the post, I am giving you a consolidated list of the Rajasthan Recipes which I posted this week..Check it out..

·  Baigan Ki Sookhi Sabzi / Vankaya Pachhi Kaaram
·  Rajasthan Kaddu Ki Subzi / Pumpkin Subzi
When I was browsing in google for a quick rajasthani recipe, I came across this paratha..And I know this is what I going to do to end up this season..And I made it just now and it was so yummy..I totally loved it..The Onion Flavour in this is so mild and not over powering at all..Since you cook it in a slow flame the onion gets cooked inside too..So try it soon..
This is my DAY 7 recipe for BM which falls in the theme Seven days of Rajasthani Recipes….Hope you like it and let me know what you think..
Ingrediants:
For Dough:
Wheat Flour / Atta – 2 cups
Salt to taste
Water – as needed
Oil – 1 tsp to smear on top
Oil / Ghee to cook the Paratha
For Filling:
Onion – 1 chopped Finely
Green Chilli – 1 chopped finely
Chilli Powder – 1 tsp
Garam Masala Powder – 1 tsp
Cumin Powder / Jeera Podi – 1 tsp
Chat Masala Powder -1 tsp
Cumin Seeds / Jeera – ½ tsp
Ajwain / Omam – ¼ tsp (Optional)
Coriander Seeds / Malli – 1 tsp
Salt to taste
Method:
In a mixing bowl add flour, salt and mix well..Slowly add in water and make a soft dough. Now apply a tsp of oil and rub all over the top. Cover it and let it rest for 15 mins.
Mix everything given for the filling in a bowl and set aside.
Divide the dough into equal portions. Take one dough and flatten it out..Now spoon some filling in the center and seal from all sides. Finish the entire dough like this.
Now take the stuffed ball and slowly roll it so that filling doesn’t leak out. Form into a  slightly thick paratha.
Heat a tawa and drop the paratha on it and cook for 1 min on one side. Flip over and apply some ghee on top and flip over and cook on both sides till golden brown.Cook on a slow flame for about 3 mins on one side, so that the onions gets cooked too..
Serve with raita or pickle.
Pictorial:
Take wheat flour and salt in a bowl

Take all your ingrediants for filling
add onions to a bowl
add green chillies
ajwain
cumin
coriander seeds
and all spice powders
add  in salt
mix well
Take your dough and filling
Take one portion of the dough
flatten it out
spoon the filling in
seal from all sides
i made two paratha like this
take one and start rolling
roll into a slightly thick paratha
both rolled
heat a tawa
put the paratha over this
flip over
apply some ghee
now this is ready to flip over
cook on both sides by applying some ghee
Serve
I had some left over curry from todays lunch..I served it with that

    Wow.. you make it look so simple, I once made onion parathas and they came out while rolling the parathas and made a huge royal mess. Never have I added onions in parathas like this.

    This is a really nice recipie, but in my views the onion chunks are too big…so I think its better to grate them rather than dice

    I'm an hard core fan of ur receipes,i always wanted to try parathas,seeing ur pictures I'm on d go….I would like to give a small suggestion,plz avoid using plastic cookware in any stage ,even though it may be written microwave safe in d long run it will bring health hazards..it's gud to use glass or stainless steel ones.Just a suggestion!
