    Quinoa Khichdi Recipe. Healthy and delicious khichdi recipe made with quinoa and lots of veggies. This is so hearty and comforting. Taste great with papad and pickle.

    Quinoa in Spanish, (/ˈkiːnoʊ.ə/, from Quechua kinwa or kinuwa)[2] is a species of the goosefoot genus (Chenopodium quinoa), a grain crop grown primarily for its edibleseeds. It is a pseudocereal, similar in some respects to buckwheat, rather than a true cereal, as it is not a member of the true grass family. As a chenopod, quinoa is closely related to species such as beetroots, spinach and tumbleweeds. As a member of the Amaranthaceae family, it is related to and resembles amaranth, which is also a pseudocereal. After harvest, the seeds must be processed to remove the coating containing the bitter-tasting saponins. The seeds are in general cooked the same way as rice and can be used in a wide range of dishes. The leaves are eaten as a leaf vegetable, much like amaranth, but commercial availability of quinoa greens is limited.

    I have been using this nutritious grain for a few months now and i love it to the core. To my surprise it turned out to be delicious, i loved it. To my tastebuds it almost tasted like wheat rava.

    Ingredients
      

    • Ghee - 1 tblsp
    • Cumin Seeds - 1 tsp
    • Cinnamon - 1 small piece
    • Onion - 1 medium size chopped finely
    • Ginger Garlic Paste - 1 tsp
    • Tomato - 1 medium size chopped finely
    • Mixed Veggies - 2 cups chopped
    • Chilli Powder - 1 tsp
    • Coriander powder - 1 tsp
    • Cumin Powder - 1 tsp
    • Turmeric Powder - 1 tsp
    • Salt to taste
    • Split Yellow Moong Dal - ½ cup
    • Quinoa - 1 cup
    • Water - 4 cups

    Instructions
     

    • Heat ghee in a cooker,
    • Add cumin and cinnamon.
    • Add onions, ginger garlic paste and saute for 2 mins.
    • Add in tomatoes and mix well.
    • Add all veggies and mix well.
    • Add all spice powders and salt and mix well.
    • Add dal and water and mix well.
    • Add quinoa and cook till it is soft.
    • Serve.
