    Sacher Torte Cake Recipe

    Sacher torte recipe is one of the recipe which I wanted to make for a very long time. Finally made it few days back and it turned out perfect. This cake was easy to bake and I made a simple version. This recipe is adapted from a cookbook “the ultimate chocolate cookbook”.

    About Sacher torte

    Sachertorte is a chocolate cake or torte of Austrian origin invented by Franz Sacher in 1832 for prince Metternich in Vienna. It is one of the most famous recipe. According to history, when the Austrian State Chancellor, Prince Klemens Wenzel von Metternich, tasked his kitchen staff with concocting an extraordinary dessert to impress his special guests. The chef had fallen ill that evening, leaving the apprentice chef Franz Sacher to take over the kitchen. Franz Sacher came up with this cake recipe which blown away the guest. 

    Sacher torte cake has a spread of apricot jam in the middle. But the recipe which I followed in the cookbook doesn’t have that step. So I skipped that step. But you can apply a layer of jam in the middle of the sliced cake and topped with a chocolate glaze.

    Ingredients for Making Sacher Torte

    • 150 ml Hot Water 150 ml
    • 165 grams All purpose flour
    • 45 grams Cocoa Powder
    • 200 grams Sugar
    • 125 grams Unsalted Butter
    • 2 Eggs
    • 1 tsp Baking powder
    • ¼ tsp Salt
    • 2 tsp Vanilla Extract

    For Glaze

    • 200 grams Chocolate 
    • 100 grams Unsalted Butter

    How to Make Sacher torte

    Pre-preparation

    Preheat oven to 180 degree C. Line a 8inch cake pan with parchment paper. Set aside. Take hot water, cocoa powder in a bowl or jug and mix well. Set aside. Take flour, salt, baking powder in a bowl and mix well. Whisk eggs with vanilla and mix well. Set aside.

    Creaming Butter & Sugar

    Take butter in a bowl, add in castor sugar and whip till creamy and fluffy. Add in eggs little at a time and whisk till creamy.

    Making Cake Batter

    Add in half of the cocoa water mix and half of the flour and fold gently. Add in the remaining cocoa mix and flour and fold gently.  Spoon the batter in to the baking pan and spread evenly. Pop it into the oven and bake for 35 to 40 mins. 

    Cake Glaze

    While the cakes are baking. Make the glaze. Take chocolate and butter in a bowl or a sauce pan and melt it in microwave or over double boiler. Melt completely. Set aside. Take the cake and invert it onto cooling rack. So the the flat bottom of the cake face upwards for the glaze. Place the rack over a baking tray lined with parchment paper. Pour the glaze over the cake and spread evenly using a palette knife. 

    Decorating

    Decorate the cake as you wish. Set aside cool and the glaze to set completely. Slice and serve.
