    Banana Cake Recipe

    Banana cake recipe , a blender cake recipe which is super easy to make all you need is a blender jar to make the batter. If you think making cakes are complicated, then think again. This banana blender cake is super soft and fluffy, perfect to enjoy with a cup of coffee, tea or milk.

    Banana Cake Recipe

    After my orange blender cake recipe which turned into a super success. I wanted to try banana version of the cake.  I made the mix in a blender and added to the flour. Once baked the cake was so fluffy and soft.

    If you think making banana cake is hard, then you have to try this recipe. Ever since I started making cake batters in blender, I am obsessed, you have to check my beetroot blender cake and sticky date pudding which I made in a blender.

    About Banana Cake Recipe

    Banana cake recipe is made with basic ingredients like banana, sugar, oil, flour. The cake itself turned out super fluffy and moist. The batter will come together in under 5 mins and the cake will be baked in less than 40 mins. 

    I am surprised, how perfect these blender cakes turn out with minimum effort. This banana cake is not an exception, all you need is to add all the ingredients except flour in the blender to make it into a creamy mix.

    I have tried adding the flour into the blender before, but I found out, the batter is hard to get out once flour is added. Most batter ends up in the blender. So I pour the blended puree over flour and fold to make batter.

    Ingredients

    • Eggs - use large eggs for this recipe. Egg is not replaceable, it is important to make the soft cake.
    • Banana - use ripe bananas, the more ripe the banana looks, cake taste more delicious.
    • Sugar - I used granulated white sugar, You can use brown sugar too.
    • Oil - for all cakes, using flavourless oil is important. Sunflower oil or refined oil can be used.
    • Raising Agent - baking soda and baking powder needs for the soft texture.
    • Flavourings - I used ground cinnamon. But you can play with your favorite flavourings.
    • Flour - I used plain flour, you can use whole wheat flour.
    • Toppings - pumpkin seeds, sunflower seeds or even nuts can be added.

    Variations

    Toppings - Instead of pumpkin seeds, you can use any toppings like flax seeds, walnuts, oatmeal.

    Add ons - You can add chopped nuts like walnuts, almonds, cashews, pumpkin seeds can be added into the batter to make it banana nut cake. Dried fruits likes raisins, kishmish, sultanas, cranberries can be used. 1 tablespoon of Chia seeds can be added into the batter to make it banana chia cake.


    Step by Step Pictures

    Preheat oven to 180 degree C (360 degree F). Line a 5 inch round cake pan with parchment paper. Grease the sides with oil and set aside.

    Blending Wet Ingredients

    1)For making banana cake, one main ingredient is bananas. Use ripe bananas, the riper the banana, more taste the cake gets.

    We are going to make the wet ingredients in a blender. So add banans in a blender jar.

    2)Now add in granulated sugar to the blender. You can use brown sugar also.

    3)Now for making the cake moist, you need to add oil or melted butter. I prefer using oil.

    4)Add in eggs. Room temperature extra large eggs are used.

    5)Add in both baking soda and baking powder into the blender jar itself.

    6)This is optional, if you like cinnamon flavour, add some ground cinnamon into the blender. You can try adding different spices too.

    7)Now that everything is added into the blender. We are going to blend this for 45 seconds to 1 minute. It will blend and combine all ingredients and gives you a smooth creamy slightly frothy puree.

    Make Cake Batter

    8)Now take plain flour in a bowl, you can use whole wheat flour for healthy alternative. Pour the blended banana mix into the flour.

    9)Now use a spatula to gently fold the batter until it is just combined. Don't over mix the batter, fold gently.

    At this point you can add in chopped nuts, chocolate chips to the batter also.

    Baking Banana Cake

    10)Pour the batter into the prepared cake pan. Sprinkle top with pumpkin seeds. You can use any nuts for topping. Place this into the preheated oven and bake for 30 to 35 minutes.

    11)To check whether the cake is baked or not, insert a tooth pick in the centre of the cake. If it comes out clean, then the cake is baked. Remove from oven, cool completely before un moulding the cake.

    Slice and serve.


    Expert Tips

    • You can even add the flour into the wet ingredients and pulse for few times to make the cake batter. This way you don't need to dirty another bowl. But make sure you don't over blend the batter.
    • You can use melted butter instead of oil.
    • Whole wheat flour can be used instead of plain flour. Use same amount (1 cup) of whole wheat flour.
    • Use ripe bananas or over ripe bananas which are literally black in colour for the cake.
    • Pumpkin seeds is optional, you can skip it if you need.
    • Instead of pumpkin seeds, you can use any toppings like flax seeds, walnuts, oatmeal.
    • I haven't made this cake without eggs, So I am not sure if the cake will turn out good without eggs.

    FAQ

    Can I use wheat flour instead of plain flour in this banana cake?

    Whole wheat flour can be used instead of plain flour. Use same amount (1 cup) of whole wheat flour.

    I am allergic to nuts and seeds. Can I skip pumpkin seeds?

    Pumpkin seeds is optional, you can skip it if you want.

    Can this cake be made eggless?

    I haven't made this cake without eggs, So I am not sure if the cake will turn out good without eggs.

    What all variations can I make to this cake?

    You can add chopped nuts like walnuts, almonds, cashews, pumpkin seeds can be added into the batter to make it banana nut cake. Dried fruits, chia seeds can be added in this cake.

    How can I make the cake chocolate flavour?

    You can remove 2 tablespoon from the plain flour and add 2 tablespoon of cocoa powder to the flour to make the batter. This will make chocolate banana cake instead. You can fold in ½ cup chocolate chips into the batter to make chocolate chip banana cake.

    How to make the best banana cake ever?

    Use ripe bananas or over ripe bananas which are literally black in colour for the cake. The riper the banana the more fragrant and tasty the banana cake will be.

    • 2 large Eggs
    • 2 large Ripe Bananas (around 1 cup)
    • ½ cup Sugar (100 grams)
    • ½ cup Sunflower Oil (120 ml)
    • 1 teaspoon Baking powder
    • ½ teaspoon Baking Soda
    • 1 teaspoon Ground Cinnamon
    • 1 cup All Purpose flour (120 grams)
    • 2 tablespoon Pumpkin Seeds

    Instructions
     

    • Preheat oven to 180 degree C. Line a 5 inch round cake pan with parchment paper and set aside.
    • Take eggs, banana, sugar, oil, baking powder, baking soda, cinnamon powder in a blender and blend for 45 seconds to 1 min.
    • Take flour in a bowl, pour the blended banana mix over the flour and fold gently.
    • Spoon this batter into the baking pan and sprinkle top with 2 tablespoon pumpkin seeds.
    • Pop it into the oven and bake for 30 to 35 mins. Insert a toothpick to check whether the cake is baked or not. If the toothpick comes out clean then the cake is baked.
    • Remove and cool completely. Slice and serve.

      What is the exact size of the cake tin u used for baking this cake ?

        it is a small cake pan. Around 4 to 5 inches or so.
