    Simple Potato Poriyal Recipe

    This is one dish which i make atleast once a week. Actually I would say atleast twice a week. Because hubby loves it, i love it and every one in the family loves it. This taste great with rice, rasam, sambar rice, curd rice or anything you name it.

    Preparation Time : 10 mins
    Cooking Time : 20 to 25 mins
    Serves: 4

    Ingredients:
    Potatoes - 4 large peeled and cubed
    Oil - 3 tblspn
    Mustard Seeds / Kaduku - 1 tsp
    Urad dal / Ulundu Paruppu - 1 tsp
    Asafoetida / Hing / Kaya Podi - a pinch
    Curry leaves a handful
    Salt to taste
    Turmeric Powder / Manjal Podi - 1 tsp
    Chilli Powder - 1 tblspn or to taste
    Garam Masala Powder - 1 tsp (Optional)
    Water a splash 
    Method:
    Chop up peeled potatoes, wash them in water and drain them.
    Heat oil in a pan, add in mustard, urad dal, asafoetida, curry leaves and let them sizzle.
    Now add in potatoes and toss well. Sprinkle in salt and turmeric and mix well.
    Now simmer the flame to a low and cover with a lid, cook it for 5 mins or so.
    Now open the lid and add a splash of water if it is sticking. Cover and cook for 8 to 10 mins.
    Now open the lid, increase the heat and add in chilli powder, garam masala powder and fry it in oil. till it gets nice colour.
    Serve with rice.

    now if the potatoes are getting too dry and sticking to the pan

    toss well and brown it lightly
