    Spinach Scrambled Eggs Recipe

    Scrambled eggs are so versatile..They can pair pretty much with anything..I have quite a few scrambled eggs recipes in my blog..I love them so much, i cannot stop inventing new recipes.I also have a spinach scrambled eggs which is made with egg whites and cheese...This is one recipe which i made for todays lunch. I also made some whole wheat pita bread and served this with that. Loved it so much..

    Preparation Time : 5 mins
    Cooking Time : 10 mins
    Serves : 3

    Ingredients:
    Oil - 1 tsp
    Cumin Seeds / Jeerakam - 1 tsp
    Onion - 1 sliced thinly
    Celery - 1 chopped finely
    Spinach - 3 cups sliced thinly ( I used palak)
    Eggs - 4
    Salt to taste
    Pepper to taste 
    Water a Splash
    Method:
    Heat oil in a pan, add in cumin seeds. Saute it for a min.
    Add in onions, celery and saute for 5 mins or so till it gets lightly golden.
    Add in spinach and a splash of water. Cook till the spinach is cooked and wilted.
    Now set the spinach aside and crack open 4 eggs in the side. Scramble it slightly.
    Now fold the spinach in and add in salt and pepper. Toss once.
    Serve with  toasted bread or inside some pita pockets..

    set the spinach mix to the sides

    crack open 4 eggs

    Mix the scrambled eggs with the spinach

    add a touch of salt and pepper

    toss it around

    I stuffed it inside some whole wheat pita pockets
