Strawberry Cupcakes Recipe / Strawberry Cupcakes with Strawberry Buttercream Frosting

This cupcake was on my mind for quite a long time, Finally i get a chance to bake them yesterday and it was a hit. Loved the soft cupcakes with fresh strawberries in them and the strawberry buttercream was perfect.

This cupcakes are so moist and fluffy and the strawberry flavour really speaks through..This recipe is so easy to make as well. You need a handful of ingredients too. Instead of strawberry you can use banana, mango, pineapple, kiwi, cherry or any of your favourite fruit as well.

Preparation Time : 10 mins
Baking Time : 20 to 25 mins
Makes : 12 cupcakes

Ingredients:

All Purpose Flour / Maida – 1 1/2 cup / 180 grams
Sugar –  1 cup / 200 grams Powdered
Soft Unsalted Butter – 100 grams
Egg – 1
Baking Soda – 1/2 tsp
Baking Powder – 1 tsp
Salt – 1/4 tsp
Strawberry Puree – 1/2 cup / 60 ml
Milk – 1/4 cup / 60 ml
Pink Food Colour few drops
Vanilla Essence – 1 tsp


For Frosting:
Vanilla Butter Cream Frosting– 3 cups (RECIPE HERE)
Pink Food Colour few drops
Strawberry – 4 mashed with a fork

(My 1 cup measures 240 ml)

Method:

Preheat oven to 180 degree C, Line muffin tray with cupcake cases. 

Sieve flour, baking soda, baking powder and salt well.

Take butter, sugar and vanilla in a bowl. Use a electric beater to whip this up till creamy.

Add in egg and beat till creamy.

Add in hald flour mix and strawberry puree. Fold gently. Half remaining flour mix in and milk. Fold gently.

Use a icecream scoop to fill muffin cases. Bake it for 20 to 25 mins.

Remove it and let it cool down.

Now make buttercream. Add few drops of pink colour and mashed strawberries and fold well.

Fill piping bag with it and pipe it over cupcakes.

Serve.

Take all your ingredients
Sieve flour 
Add in baking soda
Add in salt
add in baking powder
sieve it well
Take strawberries in a blender
Puree finely
Take butter in a bowl
Add in sugar
Add in vanilla
use a beater to cream this up
Cream it up
Add in 1 egg
cream again till fluffy
Add in half flour mix
add in strawberry puree
fold gently
Add in the remaining flour mix
and the milk
fold gently
I added some pink colour as well
fold gently
Line muffin tray with cupcake cases
Use a icecream scoop to scoop some batter
fill your tray
bake it
While the cupcake is cooling..I made some 
vanilla buttercream, i added some pink colour to it
Now chop some strawberries in a bowl
Mash it with a fork
fork it roughly
Add in strawberries
Fold well…Dont beat too much or the cream will separate
Take a piping bag, put your fav nozzle 
Fill buttercream
Take your cooled cupcakes in a plate
pipe it up
Done
Serve…

    What is oil soluble strawberry flavour? Can we use it to bake cake?? A friend gave a few oil soluble flavors but don't know what to do with them…
