Thai Red Curry Noodles with Pan Fried Tofu Recipe

This is one noodles which i made using my thai red curry paste. It is quite a unusual recipe but it worked just great. Tasted even wonderful..

I added some fried marinated tofu in this noodles and it was yum. It totally made a filling meal.

Preparation Time : 10 mins
Cooking Time: 30 mins
Serves: 2 to 3


Ingredients:

Noodles – 200 grams
Oil – 2 tblspn
Thai Red Curry Paste – 2 tblspn
Ginger – 1 tblspn finely chopped
Garlic – 1 tblspn finely chopped
Spring Onion White – from 2 chopped
Spring Onion Green – from 2 chopped
Salt to taste
Sugar – 1 tsp
Red Chilli Flakes – 1 tsp
Bean Sprouts a handful
Bell Peppers – 1 sliced thinly
Soy Sauce – 2 tsp or to taste
Lemon Juice to taste


For Tofu:
Firm Tofu – 200 grams / 1 packet cut into big pieces
Thai Red Curry Paste – 2 tblspn
Soy Sauce – 1 tsp


For Thai Red curry paste:
Onion- ½  sliced
Shallots / Sambar onion – ½ cup
Dry red chilli – 6
Ginger – 3 cm piece
Garlic – 10 cloves
Coriander seeds – 1 tblspn
Cumin seeds / Jeerakam -1 tsp
Coriander stems – ½ cup
Kaffir lime skin / Narthangai – 3 peels
Lemon Grass – 2 chopped ( i didn’t add)
Salt -1 tsp
Oil – 3 tblspn
Water as required

Method:

Grind the ingredients together for red curry paste till smooth and set aside.

Cook noodles as per package directions. Drain them and set aside.

Take curry paste and soy sauce in a bowl and mix well. Add salt if needed. Add in tofu and mix well. Set aside.

Heat 1 tblspn of oil in a non stick pan, add in tofu and fry till light golden on both sides. Remove it to a bowl and set aside.

In the remaining oil, add in ginger, garlic and spring onion white. Saute for a min.

Add in red curry paste and saute for 2 mins.

Now add in capsicum and give a 2 min toss.

Add in bean sprouts and mix well.

Add in soy sauce, salt, sugar and red chilli flakes. Now add in cooked tofu and toss well.

Add in noodles and toss well.

Add in lemon juice and spring onion green.

Toss well and serve.

For those who cannot find thai red curry paste, you can make this from scratch..Here are few pictures of my homemade curry paste from my old post

peel the skin of kaffir lime, we call it as narthangai in tamil
Your ingredients for red curry paste
Take it in a blender and make it to a 
 smooth paste by adding water and oil
Take all your ingredients
take curry paste in a bowl
add in little soy sauce
mix well
add in tofu cubes
mix well
add  in tofu pieces in
fry till golden
drain them
in the remaining oil
add in ginger, garlic and spring onion white
saute for a min
add in thai red curry paste
fry them in oil
cook till nice aroma comes
add in sliced capsicum
and bean sprouts
toss well
add in salt, sugar and chilli flakes
add in soy sauce
mix well
add in tofu
cooked noodles
spring onion green and toss well
add in lemon juice
toss well
serve
