    Hi Aarthi..
I just love ur blog. I am soo happy and excited for all the efforts u have been taking to make this. U have touched many lives and encouraged aloota woman who saw cooking as rocket science.
    I am truely inspired.
Soo.. Just wanted to share what I did for my veg n Mayo sandwich sometime back. I marinated boiled potatos(cut in small cubes) and cumubers(cut in small cubes) into n the Mayo with very lil salt and crushed pepper, over night in the fridge and spreaded it next day on white bread. It was fantastic.
I am defly going to try your version of veg Mayo sandwich very soon.
Keep up the good work. Come what may. Just keep it going. Love you.

I just read your recipe. It looks just great. Can you please specify the days mixture can be stored. I am looking for a healthy sandwich recipe which can be stored for atleast 3 days in refrigerator. But for now this recipe is going to my Tummy. Thank you.
