I enjoy making and eating salads, specially chicken salads are my favourite. I have already shared a grilled chicken salad recipe which was my all time favourite. Now this has become my favourite. Not only because it is easy to make but it is really delicious and packed with full of protein and flavours. This is a warm salad so it makes a satisfying one bowl lunch or even dinner.

Chicken salad refers to any salad that contains chicken as a main ingredient. Mayonnaise, hard-boiled eggs, celery, onion, pepper, pickles, and a variety of mustards are also common ingredients. Town Meats in Wakefield, Rhode Island, served one of the first American versions of chicken salad in 1863. Liam Gray, the original owner, combined his leftover chicken with mayonnaise, tarragon,
and grapes. This became so popular that the meat market was transformed into a delicatessen. Salads in Italian cuisine are typically composed of a variety of fresh vegetables such as tomatoes, onions, cucumbers, lettuce, and peppers, and are usually topped with an Italian dressing.

Chicken Breast :
Chicken breasts are prone to drying out when overcooked, so they should be cooked quickly over high heat. Cooking chicken breasts in a skillet, stir-frying, roasting/baking, or grilling are the best options.
Capsicum :
Because of their higher sugar content, red capsicums are the sweetest and highest in vitamin C and beta carotene. Orange and yellow capsicums contain nearly as much sugar as red capsicums, whereas green capsicums have a low sugar content due to early picking, which gives them a slightly bitter taste.
Italian Dressing :
In American cuisine, Italian dressing is a vinaigrette-style salad dressing made of water, vinegar or lemon juice, vegetable oil, chopped bell peppers, sugar or corn syrup, herbs and spices (including oregano, fennel, dill, and salt), and sometimes onion and garlic.
You can use the chicken to make quesadilla, add it to soups and salad, You can add it to rice and make a quick fried rice, add it to pastas..The options are pretty endless. The italian dressing has a nice tangy and a little sweet bite to it, which i simply loved. I am sure a dash of that dressing can jazz up the flavours of your plain ol boring salad.

Warm Italian Chicken Salad Recipe
Ingredients
- Olive Oil - 1 tsp
- Capsicum / Red Bell Pepper - 2 chopped
- Tomatoes - 2 large deseeded and cubed
- Lettuce or Cabbage - 5 cups shredded
- Tyson® Grilled & Ready® Oven Roasted Diced Chicken Breast - 1 22 Oz Bag
- Wish-Bone® Italian Dressing - 1 cup or as needed
- Olives as needed
- Parmesan Cheese as needed
Instructions
- Heat 1 tsp oil in a pan, add in capsicum and stir fry till it gets nicely charred. Add in the chicken cubes and saute for 2 mins or so.
- Add in the salad dressing and mix it well.
- Now take it off the heat and add in tomatoes and mix well..The residual heat will wilt the tomatoes just a little.
- Now pour this warm mixture over a bowl of lettuce or cabbage, top with olives and parmesan and toss gently.
- Serve immediately.
