This is one of the Easy Peasy Recipe...It hardly took me 10 min to make apart from the cooking time of the eggs..This is a easy egg preparation that is cooked in a simple sambal paste..This is one of the simple Malaysian style egg dish.. Onion-1 sliced into rounds
Salt to taste
Dry Red chilli-4 soaked in water
Shallots / Sambar Onion-5
Ginger-1 inch piece
Tamarind juice-1 tblspn
Grind all the ingrediants for the sambal to a smooth paste.
In a wok heat oil,Add in the sambal paste and cook till oil separates.Season with salt and sugar.Add in tamarind juice and cook for 3 min.
Add in sliced onion and toss well for 2 min.
Now add in the eggs and mix till well coated.
Serve with rice.

|Grind shallots,red chilli paste,garlic,ginger to a fine paste|
|Heat oil and add in the paste..|
|add in tamarind juice (i used readymade paste,you could use fresh tamarind juice)|
|Season with salt and sugar|
|add in onions and toss well|
|Throw in the eggs|
