Thinai Dosai / Fox Millet Dosai

I always wanted to post recipes using whole grains like millet, kambu and stuffs like that, I always buy them when i go for shopping but keeps forgeting about them. And finally they will get spoiled and i throw them away. Last time when i was shopping i bought these and as soon as i reach home i got into action, before i forget. I made a dosa batter out of this.

  It is so easy to make but ridiculously healthy for you. It really calls for simple ingredients. But the end product is so worth it.

Preparation Time :20 mins
Relaxing Time : 12 to 14 hours (Soaking & Fermenting)
Cooking Time: 1 to 2 mins for one dosa


Fox Millet / Thinai - 1 cup
Rice - 1 cup
Urad dal / Ulundu - 1/2 cup
Fenugreek Seeds / Vendayam  - 1/2 tsp


Take millet, rice in a bowl and wash well. Now soak this water for 6 hours.

Take dal and fenugreek in a bowl and wash well. Now soak this water for 6 hours.

Now take dal and fenugreek in a blender and make into a fine paste by adding some water. pour that into a container.

Same way add  rice and millet and make into a smooth paste by adding some water. Pour that into the same container.

Add salt to this and mix well.

Let this ferment for 8 hours.

Now mix well again. 

Heat a tawa and make dosa out of it. Drizzle oil and cook for a min. Flip over and cook on other side too.

Serve immediately with chutney.


You will need Rice, Millet, Urad dal & Fenugreek
This is how Millet looks like

Take Millet and Rice in a bowl and wash well

Soak it in water

Take urad dal and fenugreek in a bowl and wash well

Soak it in water

Let this soak for 5 to 6 hours

Take urad dal and fenugreek in a mixer

Make it into a smooth paste

Take in a container

Grind rice and thinai like this

pour it over dal and mix well

Add salt

Mix well

Let it ferment for 8 hours

Now make dosa

Let it cook on a low flame

Flip over and cook

Hi Aarthi! Those dosa look so good, makes me hungry just to see them. I do have a question about the rice...what kind is it? I have white & brown basmati but the rice looks to be different than them. I'm really enjoying your blog as Indian food is one of my, if not the most, favorite kind of food to eat! I look forward to reading your posts and watching your videos...thanks!

@Crystal in Texas We use normal ponni(a brand) rice for this, it is readily available here. But you can use white basmati rice for this.
