Jelly Doughnuts Recipe / Jelly Donut Recipe / Jam Doughnuts Recipe


I have been feeling quite lazy for the past few days. I had cold, so i was taking my pills. It made me feel dizzy always and i couldn't properly cook. This made me go out of recipes ,Usually i will have more than 10 recipes on drafts, but now i have only couple of them. That too is a kozhukattai recipe which i made for ganesh chaturthi. I didn't feel like posting them now. So yesterday, i took all my energy and decided to do my long time wanted recipe, a jelly donut and spain churros with chocolate dipping sauce. I made them too.


I wanted to post these baby first because i am telling you, this is one of the best doughnut recipe ever. It was soft and fluffy, just perfect. I already posted a eggless donut recipe, but this one hit the spot and it is so much better than that. Now i have made clear that this is doing to be my go to donut recipe. I will be making it quite often too..


I adore donuts, these fluffy sweet things make me crave for them too. These donuts are even special because they are filled with jam, you can fill them with sweet cream too, i will share different variation very soon..

Preparation Time : 15 mins
Resting Time : 2 Hours
Cooking Time : 2 to 3 mins per batch
Makes : 20 small donuts

Ingredients:

All Purpose Flour / Maida - 2.5 cups / 300 grams
Sugar - 3 tblspn
Egg - 1
Warm Milk - 3/4 cup / 180 ml
Yeast - 2 tsp
Vanilla Essence - 1 tsp
Unsalted Butter - 4 tblspn melted
Salt - 1/4 tsp
Oil for Deep frying
Jam or Preserves - 1.5 cups 

For Cinnamon Sugar :
Granulated Sugar - 1 cup ( powdered)
Cinnamon Powder - 2 tblspn

Method:

Start by activating yeast. Take yeast in a bowl, add in 1 tsp of sugar and 3 to 4 tblspn of warm milk. Leave it aside for 5 mins till the yeast is foamy and bubbles up. 

Now take egg, sugar, vanilla,, milk, salt in a large mixing bowl and beat it well so the sugar is melted.

Now add in the foamed yeast mix and mix well. 

Add in flour and mix well with a spoon and knead it to form a dough. It will be a soft, non sticky dough. Cover the dough with a cling wrap and leave it to rise for 1 hour (In colder region it may take 2 to 3 hours)

Once it is doubled in size, punch the air out and transfer the dough to a floured work surface. Roll the dough to 1 ot 2 cm thickness. Use a cookie cutter to cut out rounds.

Now place the cutouts in a floured tray and cover again and let it rise for 30 to 45 mins. Use the leftover scraps to keep on rolling.

Now Heat oil for deep frying, Once the oil is hot, drop the donuts and fry till golden on both sides, it will take just couple of mins.

Once fried remove them to a paper towel. Once all the donuts is fried, make cinnamon sugar, mix cinnamon and powdered sugar.

Dip the fried donuts in cinnamon sugar and roll them well.

Now for filling the donuts, take jam or preserve in a microwave safe bowl to warm it slightly. I microwave it for 20 sec.

Now fill a piping bag with the jam. take a donut, make a slit using a knife on the side of the donut. Insert the piping bag and give a good squeeze.

You can roll them on cinnamon sugar second time too.

Serve warm.

Take your ingredients


Take yeast in a bowl

Now the yeast is activated, so you can proceed with the
 next step..
Crack open a egg in a large bowl


add some sugar to it


Add in some vanilla


and some melted butter


Add in salt


Warm milk


the activated yeast mix


Mix well


Add in flour


Mix well so it gets together


Knead it to a soft dough


cover it and let it rise


Now it is double in size


punch the air out


transfer it to a floured surface


roll it into 2 cm thickness


Use a cookie cutter to cut out rounds


Cut it like this


remove the leftover dough so you are left with the cutouts


perfect


re roll the scraps and make more doughnuts


Place these in a floured plate or tray 


cover it with plastic wrap and let it rise again


Look now they are double in size


Heat oil for deep frying
Once it is hot, drop the doughnuts in, dont crowd the pan

Once they are golden on one side, flip them and
cook on other side too


Remove them to a plate


Now for cinnamon sugar, take some powdered
sugar in a bowl, i took regular
 white sugar in a blender and powdered it finely


Add a good amount of cinnamon


mix well


Take a donut and coat them


now all coated



Now for the jelly part, take your fav jam or preserve
 in a microwave safe bowl,


I microwave it for 20 to 30 sec to warm them slightly


I filled a piping bag with this


make a hole using a knife


pipe the jam in


now it is piped


i rolled once more in the cinnamon sugar


TADA


Enjoy this warm, it is so yum..

  8. @AnonymousIt depends on each climatic condition. In cooler place, it takes longer. In hot place it takes less time.

  11. Thnx Aarthi for the recipe...tried it but didn't come well as in your pic.some of them were hollow inside like pani puri.I don't understand what went wrong.is it because the thickness want not correct? Pls advise
