    Eggless Pound Cake which has butter, sugar and cashews. The cake is dense and moist with rich in butter flavour. Cashew pound cake with step by step pictures.

    Cashew Pound Cake

    Simple and easy cakes is what i love a lot. The cake with no cream, the cake which can be had with a cup of chai or milk is my favourite. I have shared many cakes like that before, this is one of my favourite among that.

    I have already made a pound cake recipe, It is a chocolate chip pound cake. It has eggs in it plus it is really old post. So i wanted to make an eggless version of the basic pound cake recipe. When i searched in google. I came across many recipes, but all those recipes had either milkmaid or some other ingredients.

    Ingredients for Eggless Pound Cake

    • All Purpose Flour / Maida / Plain Flour - 1 ¾ cup / 210 grams
    • Sugar - ¾ cup / 150 grams
    • Milk Powder - ¾ cup / 100 grams
    • Vanilla Essence - 1 tsp
    • Unsalted Soft Butter - 100 grams
    • Baking Soda - 1 tsp
    • Baking Powder - 2 tsp
    • Thick Un sour Curd / Greek Yogurt - ½ cup / 120 ml
    • Milk - ½ cup / 120 ml
    • Water - ½ cup / 120 ml
    • Cashews - ½ cup chopped
     
     
    But i came across one recipe which used milk powder. So i thought of giving it a shot because i have never used milk powder in my baking recipes. The result is just perfect got the most soft, fluffy, moist cake ever. I am sure that this recipe is going to be a keeper.
     
    I made this cake and when i sliced and tasted it. It was so yummy couldn't stop with just one slice. Sure you all will love it, so give it a shot and let me know how it turned out for you.
     

    How to Make Pound Cake

    1. Preheat oven to 160 degree C. Take a loaf pan and butter it really well, sprinkle with flour and coat on all sides. Tap of the excess flour and set aside.
    2. Take milk, water, curd in a jug and mix well.
    3. Take flour, milk powder, baking soda, baking powder in a sifter and sieve well. Set aside.
    4. Now take butter, sugar and vanilla in a bowl and use an electric beater and beat till creamy.
    5. Add in half of the flour mix, all the milk mix and fold gently. Add the remaining flour and fold gently.
    6. Pour this entire batter in the loaf pan and sprinkle with cashews.
    7. Bake this in preheated oven for 40 mins.
    8. Remove from oven and let it cool for 15 mins.
    9. Now remove from tin and cool. Slice and serve.

    Ingredients

    Cashew Pound Cake Step by Step

     
     
    Take all your ingredients

     

    Prepare a loaf pan, Refer this post for seeing it
     in step by step pics

     

    Start by mixing up the wet ingredients..Take milk in a jug

     

    Add in thick yogurt / curd

     

    Add in water

     

    mix well and set aside

     

    Take flour in a sifter

     

    Add in milk powder

     

    Add in baking powder

     

    baking soda

     

    Sieve it well

     

    Take butter in a bowl

     

    Add in sugar

     

    Now add a good amount of vanilla

     

    use a electric beater to cream this well

     

    Cream till it is fluffy

     

    Add in half of the flour mix

     

    Add in all the wet ingredients

     

    fold gently

     

    Add in the remaining of flour mix

     

    fold gently

     

    pour the batter in the prepared pan

     

    now take some cashews

     

    chop them roughly

     

    sprinkle all over the top

     

    baked to perfection

     

    let it cool, then slice into thick slices

      You can use normal yogurt, but make sure it is not too runny. Dont reduce the water level.

      Hi Aarthi Thanks for the recipe, I tried this cake this week end it came very well taste was very good I made it in cooker I didn't got white cake as in the pic it was in brown colour since I couldn't beat butter I put it in mixer grinder whetehr it shouldn't be done

      Hello mam in my oven the top n edges of the cake always cook faster is it because of temp of the oven? Plz help me and in case of that in above your recipe u mntnd 160degree and can i decrease the oven temp to 140degree n if i make then it will raise properly?plz mam plz help me on this.       @AnonymousDont reduce the temp, bake it at the mentioned temp, once the top gets lots of colour, cover it lightly with foil and then continue baking. Dont cover comepltely just place a foil on top lightly.

      Hello/ this is a fantastic recipe resulting in a yummy cake each time I make it . Was wondering if it can be turned into a chocolate cake ? Perhaps by replacing some of the flour with cocoa? What do u think ?

      Instead of water I used Brue Coffee and add some rum to it...u know what the cake becomes more moist and the smell of coffee with rum makes the cake looks like in the famous cafè cake...😘😘😘

        Reduce 1/4 cup flour and add 1/4 cup cocoa. you can even stir in a handful of chocolate chips

      You have mentioned your chocolate chip pound cake with eggs. I checked that link. The ingredients mention 4 eggs while in the process you have mentioned just two.
      Please let me know whether there are 4 eggs or 2. I want to try that recipe as that cake too looks great.
