Eggless Fresh Orange Cake Recipe / Orange Yogurt Cake Recipe

We are taking a week off and going on a vacation to kashmir. We are leaving today night and will be back only on april 3rd, but no worries i have scheduled all the post, so you will be getting new post everyday. But i wont be able to reply to all your comments. So please bare with me, i will be replying all the mails after a week. And you know how excited i am, so thrilled to check out the whole new world. I will be sharing my experience with you all when i come back, i am planning to do a entire post on the foods which i explored and enjoyed there, OFCOURSE YOU KNOW I WILL!

I have almost done with all the packing, i have been packing for past 3 days. I started early, because carrying a toddler with you, you dont want to miss anything important. So i have been thinking and packing all the stuffs which i need on this week journey. I got a bit of time right now, so thought of jumping on the blog and share this delicious cake post and this exciting news to you all..So BON VOYAGE FOR ME…
Now this is one of the simplest and tasty cake which you will ever make and taste. It takes less than 5 to 10 mins to put together and the cake taste so delicious and soft without egg and butter. It is pretty healthy as well, you can give it to 1 year old babies too..
Hope you will give this a try and let me know how it turns out for you..
Preparation Time : 10 mins
Baking Time : 30 to 40 mins
Makes : 5 to 6 slices

MY 1 CUP MEASURES 240 ML

Ingredients:
All Purpose Flour / Maida – 1 cup / 120 grams
Oil – 1/4 cup (Use normal vegetable oil)
Sugar – 1/2 cup / 100 grams
Vanilla Essence – 1 tsp
Orange Essence – 1/4 tsp (optional)
Baking Soda / Cooking Soda – 1/2 tsp
Baking Powder – 1/2 tsp
Orange Pulp – 1/2 cup
Thick Unsour Curd / Greek Yogurt – 1/3 cup
Method:
Preheat oven to 180 Degree C.
Take a 10 cm round cake pan, oil them well, sprinkle with flour, coat on all sides, tap off the excess. Set aside.
Sieve flour, baking soda, baking powder well and set aside.
Take oil, sugar, vanilla essence, orange essence, orange pulp, curd in a bowl and mix well.
Add in the sifted dry ingredients and fold gently.
Pour this into the pan and bake it for 30 to 40 mins.
Remove the cake, insert a tooth pick and check whether it is done. If the tooth pick comes out clean then it is done.
Remove the cake pan from oven, let it cool down for 30 mins. 
Invert and slice and serve.

Pictorial:
Take all your ingredients
Start by sifting the dry ingredients…Take flour in a sifter
Add in baking soda / cooking soda
and some baking powder
sieve it up
set this aside
I took a round cake pan, oiled them well and sprinkled some flour over it, coated it on all sides and tapped off the excess
This recipe calls for orange juice, but i took a big orange, Peeled it, Removed the seeds and Ground it coarsely . You dont have to remove the skin of the orange segments
Take oil in a bowl
add in sugar
and some vanilla essence
add in orange pulp
add in thick yogurt / curd
I happened to have some orange essence, so i added few
 drops of them too..If you dont have this, just skip it
use a whisk and mix well
mix till the sugar is melted
Add in the flour mix
mix well
it will be a little thick batter
A close look, i love the orange pulp which is scattered 
all over the cake..
Pour the batter on to the pan..it smells really orangy 
and citrusy, so yum
Bake them
Cool them down and cut into slices
Enjoy
This is a kind of cake, you will be enjoying with a cup of tea, coffee or milk

    @Anonymousit depends on the size of cake pan, if it is big one, it will take the same time. Insert a tooth pick to check whether the cake is done.

    Hi Aarthi..thanks for sharing such brilliant recepies which are easy to make and healthy.
    I am new to the baking world and plan to buy an OTG for making cakes and cookies at home for my 2 year old.I wanted to know if its necessary the go for convection function in OTG… i.e with fan or an OTG without fan will also be good enough..kindly help me with your experiences… Thanks Rachana

    I was so excited the moment read your recipe of Eggless Orange cake that when I went back home from office I just tried the recipe carefully, but only to have a disaster cake, alas!!. It did not raise at all and the texture was like pudding. I guess liquid ingredients was more than required. I don't have the measuring cups. Kindly, give me your tips. I want to get an exact orange cake as it in ur post. Kindly help.

    @AnonymousSorry to hear about your disaster. What i suggest you, for baking you need proper measuring cups and spoon. Because for baking measurements are more important. So please get measuring cups and spoons and use that for making cakes

    Hurray!!! came out well. But the outer layer of the cake is dry and little hard (like crisp) and not as soft & moist as the inner part. Followed the same measurement… Not sure what went wrong… Adding more oil will bring the softness? Pls suggest. Planning to try ur orange pudding cake tomorrow…

    Hi Aarthi,
    I tried this recipe today. Only difference is i poured it in a little flat pan and baked, as i dont have a deep round bowl. Initially looked like it baked well. Thought it dint get as brown crust as shown in your pic, edges were brown, and it slightly started cracking on top, When inserted toothpick, it came out clean. But after cooling , i saw its slight wet at bottom. Its happening to all my cakes. :(I tried changing my silicone bakeware to nonstick aluminium bakeware also. Still the same. What is that is going wrong. Can u help me?

    Hi Arthi, can i try pineapple instead of orange for the same receipe? Should i add pineapple as puree or cooked with sugar in a thick consistency? I also hve pineapple essence i wiil try adding the same as u added orange essence. Is there any other change i should make please tell me to get a pineapple cake?

    Hi Arathi, I have tried with the same preparation. After 25 minutes the top of the cake comes out brown and I remove and test with tooth pick, but the inside was not done. I baked for another 5 minutes the cake became flat and after cooling down and cutting I saw it is not done at the middle.
    What is the problem. I preheat it with 180 degree convection mode and my oven automatically buzz after preheat.

    Hi Arathi,I follow your blog as each bake looks so tempting. Wanted to try this recipe too.but a little confused as you have mentioned that your cup measures 240 gram.and yet in recipe you have taken 1 cup flour/120 gram maida.plz tell me what weight should I use.120gm or 240 GM.thanks.

    @Bina Patelweigh as mentioned in the recipe. Because each ingredient weighs diff in a cup. If you have a 240 ml cup you can use that

    Hi tried Ur cake recipe for 1 cup maida it came out well but when I tried it second time I doubled all the ingredients it came out well but it was bit less sweet as compared to smaller quantity I tried earlier…Plz help with sugar amount while doubling the cake quantity

    I have tried Orange cake but after 40 mins also it was wet in between. N it not swelled also.. means it was not fluffy.wt may be the reason?
