Baked Crispy Chicken Breast with Pineapple Salsa Recipe - Continental Food 3

I love these kind of meals a lot..I like to treat myself with these kind of meals often. This is a simple, clean and healthy plate of food. It taste really delicious and is very light on tummy as well.

I made a baked crispy chicken which turned out so crispy, read below to see the points you have to remember to get crispy chicken. I served that with a cool refreshing pineapple salsa. The combination was so delicious.

Now for getting the perfect crispy baked chicken, follow these steps

1)Cut the chicken into two slices so it cooks faster without drying out.
2)If you can get use panko breadcrumbs which gives you really crispy exterior. 
3)Main thing is to heat the baking pan before putting the chicken in, this gives you the crusty chicken straight away.
4)Dont over bake.

Preparation Time : 15 mins
Baking Time : 20 mins
Serves: 2


For Chicken:
Boneless Chicken Breast - 2
Olive Oil - 2 tblspn
Salt to taste
Red Chilli flakes to taste
Panko Breadcrumbs or any breadcrumbs - 1 cup
Parmesan Cheese - 3 tblspn (optional)

For Pineapple Salsa:
Pineapples - 2 cups chopped into small pieces
Red Bell Pepper - 1/4 cup chopped finely
Green Chilli - 1 deseeded and chopped finely
Coriander Leaves - 2 tblspn finely chopped
Lemon Juice - 1 tblspn
Salt to taste
Sugar - 1.5 tblspn or to taste


Preheat oven to 200 degree C. Take a baking pan and add 1 tblspn of oil to it and spread evenly. Now pop this in oven and let it heat up for 10 to 15 mins.

First lets make the pineapple salsa. Take all the ingredients in a bowl and toss well. Set aside till serving.

Now take the chicken and pat it dry, slit it open so each chicken gives you two chicken breast.

Now season this with salt and chilli flakes and rub on both sides of the chicken. Now drizzle 1 tblspn of  oil over it and set aside.

In a plate take panko crumbs. Dip each chicken in the crumbs and coat on both sides. Now sprinkle the top with parmesan cheese.

Now take the hot baking pan from oven, take the chicken and place it on the pan. Pop it back in oven and cook for 15 mins, now flip over and cook for another 5 mins.

Now remove this from oven and serve with pineapple salsa.

drizzle 1 tblspn of oil..pop this in oven for 15 mins
Take all your ingredients for pineapple salsa

Chop up pineapple into small pieces

take it in a bowl

take red bell pepper

chop it finely

add it to the bowl

take a jalapeno pepper or chilli pepper

deseed it

chop finely

add it into the bowl

take some coriander leaves

chop finely

add it in

season it with salt

add in sugar

squeeze in some lemon juice

now that everything is added in

toss well..Set aside till needed

Now lets prepare the chicken..

take a chicken breast

slit it middle

so you get two chicken slices

season both sides with salt and red chilli flakes

apply little oil over it

now dip the chicken in panko breadcrumbs

coat well

i sprinkles some parmesan cheese on top of it

now carefully take the hot baking pan from oven

place chicken in it..

pop it in oven and bake for 15 mins

now flip over and cook for another 5 mins


place it on a serving plate

take your salsa

spoon it in
