    Pumpkin Puli Kuzhambu or Parangikai Kulambu with step by step pictures. This is made with Pumpkin,Urad dal and Tamarind Pulp

     

    Parangikai Kulambu

    Its been a while since i posted any kuzhambu recipes. I bought a cute little pumpkin from my veg vendor last week. I made this kulambu and also a quick pumpkin stir fry(will be shared soon). Have posted so many kuzhambu recipes in my blog, take a look at those as well.

    Ingredients for Pumpkin Puli Kuzhambu

    • Pumpkin - 3 cups peeled and cubed
    • Oil - 3 tblspn
    • Mustard seeds / Kaduku - 1 tsp
    • Urad dal / Ulundu Paruppu - 1 tsp
    • Asafoetida / Hing / Kaya podi - a pinch
    • Curry leaves - 2 sprig
    • Shallots / Sambar Onion - 10 peeled
    • Tomato - 1 large chopped
    • Chilli powder - 1 tblspn
    • Coriander powder - 2 tblspn
    • Turmeric powder - 1 tsp
    • Rice Flour - 1 tblspn
    • Water as needed
    • Tamarind Pulp - 2 tblspn
    • Salt to taste
    • Sugar - 1 tsp

    This is an easy recipe to make, and as usual kulambu taste best with rice. You can have it with idli or dosa as well.

    How to make Pumpkin Puli Kuzhambu

    1. Heat oil in a kadai. Add in mustard, urad dal, asafoetida, and curry leaves.
    2. Now add in shallots, tomatoes and saute for 3 mins or so.
    3. Add pumpkin and saute for 4 to 5 mins, till it is well browned.
    4. Add in the spice powders and saute well.
    5. Now add in rice flour and mix it through.
    6. Add in water, tamarind pulp, salt and sugar and mix well. now simmer this whole thing for 10 mins.
    7. Serve.

    Ingredients
      

    • 3 cups Pumpkin peeled and cubed
    • 3 tablespoon Oil

    Parangikai Kulambu step by step pictures

     
    peel and cube pumpkin
    heat oil in a kadai. Add in mustard seeds and urad dal 
    add asafoetida
    shallots and tomatoes...i added some onions too, 
    since i had very little shallots
    cook for few mins
    add turmeric powder and mix well
    add pumpkin
    toss well and cook that till it is half cooked
    add in chilli and coriander powder
    mix well
    now sprinkle some rice flour
    fry that in the oil
    add in water
    add tamarind pulp
    salt
    add sugar..the sugar balances the whole gravy
    mix well and simmer the whole curry for a good 10 to 15 mins
    now the curry is done
