    Croquettes are my favourite..I love the creamy interior and the crispy exterior which is the character of a croquettes..This version is my favourite of all croquettes i ever made..Hubby who is fussy about cheese loved it so much, the spinach and cheese just tasted yummy together..I have few more croquettes recipe coming up, so stay tuned..

    This one i made and served it with a cup of tea..You dont need any dipping sauce for it, but tomato ketchup or sweet chilli sauce or my garlic sauce taste fantastic with this..And this is great for kids who are fussy about spinach..They will love it for sure..

    Preparation Time : 10 mins
    Cooking Time : 15 mins
    Makes : 12 to 15 croquettes


    Ingredients:

    Oil - 1 tsp + 2 tblspn
    Garlic - 1tblspn finely chopped
    Spinach - 4 cups chopped finely
    Wheat Flour / Atta - 3 tblspn
    Milk - ¾ cup to 1 cup
    Chilli flakes - 1 tsp
    Salt to taste
    Sugar - ½ tsp
    Cheese - ½ cup grated or cubed
    Oil for deep frying

    For Dipping and Coating:
    Wheat Flour / Atta - ¼ cup + 3 tblspn
    Water - ½ cup or as needed
    Breadcrumbs - 1.5 cup or as needed

    Method:

    Heat 1 tsp oil in a kadai. Add in garlic and fry for a min. Add in spinach and cook till it wilts and raw smell leaves. Remove it to a bowl.

    Heat 2 tblspn of oil and add in wheat flour and stir fry for few mins. Now add in milk and keep mixing till it gets thick.

    Add in cooked spinach, chilli flakes, salt, sugar and cheese. Mix well. When it gets thick, remove it to a bowl and set aside to cool.

    Now take small size from the mix and put it in a plate. You can pop this in fridge so it set a little.

    Now take plain wheat flour in a plate for coating. Take wheat flour and water in a bowl and mix to a runny mix..Take breadcrumbs in a plate and set aside.

    Take each spinach ball and coat it in wheat flour, dip it in wheat flour liquid and coat it in breadcrumbs. Put it in a plate and set it in fridge for 30 mins.

    Now heat oil for deep frying and deep fry the croquettes till golden.

    Drain onto some paper towel.

    Serve hot.

    keep ,mixing till cheese melts

    at a point the mix will start to leave the sides

    remove to a bowl and let it cool

    use a spoon to take some portions

    put it in a plate..if it is too soft, pop it in fridge

    Now take little wheat flour in a bowl

    add water to make a runny liquid
    Pin
    now time to make the croquettes

    start by rolling the croquettes in wheat flour

    now put them in the liquid

    coat them well
    Pin
    drop them in breadcrumbs

    coat well
    Pin
    pop these in the same plate
    Pin
    put it in fridge for atleast 30 mins

    now drop them in oil

    fry till golden

    now it is golden

    drain them and serve
