    Pineapple pie is a light and refreshing dessert made using fresh pineapple and short crust pastry. Just like other homemade pies like apple pie, strawberry lattice pie, this pineapple pie comes together quickly without much effort but tastes absolutely delicious. Serve this pineapple pie warm or chilled with a scoop of ice cream for an extra indulgent treat. 

    Easy Pineapple Pie

    I love pies. I thought of making a pineapple pie because I had a ripe pineapple at home. This pie turned out really beautiful, buttery and sweet, it was delicious. I used my homemade shortcrust pastry recipe. It is a fool proof recipe, I use them for all my pies, tarts and stuffs like that.

    This recipe is a making of a pie crust and easy sweet pineapple filling. It is a light and refreshing dessert that is quick to make and impressive to serve. The sugar amount is entirely upto you, you could make it as sweet as you like. You could do exactly the same way with any fruits as you like.

    About Pineapple Pie

    Pineapple pie is a simple and delicious dessert with a sweet and slightly tangy filling inside a buttery, flaky crust. It is made with fresh pineapple, sugar, cornflour and a ready made shortcrust pastry.

    This recipe came about when I had a pineapple lying in the kitchen and to be honest, it was never my go to fruit. After making an apple pie last week, I had some leftover pastry and thought of turning this pineapple into something tasty instead of making juice. 

    So I kept it very simple and used ingredients I already had. The filling was made with fresh pineapple, sugar, a little pineapple essence, lemon juice, corn flour, milk and liquid glucose. With a store bought pastry sheet, the whole pie came together quickly without spending more time in the kitchen.

    The pie turned out so good that I could not stop at one slice. Even if you are not a big fan of pineapple, this easy pie might change your mind . It is quick to make, full of flavours and perfect when you want a homemade dessert without much effort.

    If you are looking for an easy dessert that feels special, this pineapple pie is a great choice. It is completely beginner friendly and each bite bursts with flavours which is perfect to enjoy with family and friends. 

    Ingredients

    • Shortcrust pastry : This is the base of the pineapple pie. I have used store bought pastry, but you can also try my homemade shortcrust pastry recipe made with flour and butter. 
    • Pineapple : Use fresh good quality pineapple to make the puree. It gives a natural fruity sweetness and tropical flavour to the filling. 
    • Sugar : Sugar quantity can be adjusted based on how sweet you prefer the filling. 
    • Pineapple extract : It is used to enhance the pineapple flavour and aroma.
    • Lemon juice : It also helps balance the sweetness and enhances the overall flavour of pineapple. 
    • Corn starch : Corn starch acts as a thickening agent. It helps the filling set properly and prevents it from becoming watery after baking.
    • Brushing on top - I used milk to brush on top of the pastry. Sprinkle with sugar to create crust on top.
    • Glaze - I used cornsyrup mixed with water to create the glaze. You can use any fruit jam.

    Step by Step pictures

    Preparing Pineapple

    1)For making pineapple pie, choose best quality ripe pineapple.

    2)Remove the peel of the pineapple using a serrated knife.

    3)Cut half of the pineapple into into chunks.

    4)Take pineapple into a blender and make it into a fine puree.

    5)Don't add water when blending. Set this aside.

    6)Now the remaining half chop it into very small pieces. Set this aside.

    Pineapple Pie Filling

    7)Take all your ingredients for pineapple pie filling. You need pineapple puree, chopped pineapple, sugar, lemon juice, pineapple extract and cornstarch.

    8)Take chopped pineapple and pineapple puree in a pan.

    9)Add in sugar to taste. The amount of sugar totally depends on the sweetness of pineapple you are using.

    10)Cook this together till the sugar melts and the filling thickens. It will take 5 to 8 minutes.

    11)Mix some water into the cornstarch. Pour this slurry into the pineapple to thicken it.

    12)You have to cook this for 5 more minutes till the cornstarch is completely cooked.

    13)Add in lemon juice. This gives a balance taste.

    14)Add in pineapple extract and mix well. This is optional, you can leave this if you want.

    15)This is your pineapple pie filling. Now you can store this in fridge upto 10 days.

    Preparing Pie mould

    16)I used this glass baking dish for making my pie. you can use metal as well. Grease the baking dish with butter and set aside.

    17)Now take your prepared shortcrust pastry. Check this recipe for homemade shortcrust pastry.

    Lining Pie Mould

    18)Remove the pastry from fridge atleast 5 minutes before rolling, so it is easy to roll.

    19)Divide the pastry into two portion. You need for the base and the top.

    20)I find it easy to roll the pastry between two sheets of parchment paper or plastic wrap. Place one half of the pastry between sheets of plastic wrap.

    21)Roll it gently to spread evenly.

    22)Make it in 1 inch thickness.

    23)The rolled pastry should be larger than the pie mould.

    24)Now lets line the pie plate with the pastry. For that, gently remove the top layer of the plastic wrap.

    25)With the help of the bottom plastic wrap, lift the rolled pastry and gently transfer to the pie plate.

    26)It will be pretty easy. Don't remove the plastic wrap yet. Gently use your fingers to line the pastry on the plate.

    27)It should be lined properly on the base and the side as well.

    28)Once the pastry is lined properly, you can remove the plastic wrap gently now.

    29)Look the base of the pie dish is lined perfectly. You can place the pie plate into the fridge if you feel the pastry is too soft.

    30)Now transfer the cooled pineapple pie filling into the pastry.

    31)Now take the remaining half of the pastry. roll it evenly between two sheets of plastic wrap.

    32)Following the same method. Take the pastry using the plastic wrap and place it over the pie dish. The bottom pastry will stick to the top pastry.

    33)Now gently peel off the plastic wrap.

    34)Now use a knife to cut off excess pastry hanging on the sides.

    Crimping and Decorating the Pie

    35)Now use your fingers to pinch the ends to create a crimping.

    36)Like this. Go all over the sides of the pie.

    37)Pineapple pie is crimped and lined.

    38)Now take your cut off excess pastry. We are going to make designs to decorate the pie.

    39)Roll the pastry. Take cookie cutters. I am using this butterfly cutter.

    40)Cut out small butterfly from the pastry.

    41)Like this. Cut out as much as possible.

    42)Now take some egg wash or milk and brush on top of the pastry.

    43)Cut out small slits on top of the pie. Place the butterfly on top.

    44)This is optional, but i like to sprinkle some sugar on top.

    Baking pie and Finishing Touches

    45)Now lets bake the pie in a preheated oven till golden and bubbly.

    46)Once the pie is baked, remove from oven and set aside.

    47)I like to brush the top of the pie with some kind of sweet gloss. I am using corn syrup and water.

    48)Heat it gently in a sauce pan till hot and sticky. Instead of this, you can use any kind of jam.

    49)Brush this glaze over the pie.

    50)Look how perfect the pineapple pie looks like.

    51)Allow the pie to cool completely before slicing and serving. Enjoy with a scoop of ice cream.


    Expert Tips

    • You can adjust the sugar based on the sweetness of your pineapple. Some pineapples are naturally sweet, so taste before adding too much. 
    • Always cook the pineapple filling until it thickens properly. A runny filling can make the crust soggy while baking. 
    • Let the filling cool before adding it to the pastry. Hot filling can melt the crust and affect its flaky, buttery texture. 
    • For extra flavour, you can also add a pinch of cinnamon or nutmeg powder. This enhances the tropical taste and gives a warm aroma to the filling. 

    Serving and Storage

    Store leftover pineapple pie in an airtight container in the refrigerator. It stays fresh for up to 3 to 5 days. Reheat them in the oven or airfryer for a few minutes before serving to bring back its texture. 

    Pineapple pie tastes best when served warm. You can enjoy it on its own or serve it with a scoop of vanilla ice cream or whipped cream for extra richness.  For a bakery style finish, lightly dust icing sugar on top before serving.

    FAQ 

    Q. Can I use canned pineapple instead of fresh ? 

    Yes, canned pineapple works well. Just make sure to drain the syrup properly and adjust the sugar depending on the sweetness. 

    Q. Why is cornstarch added to the filling ? 

    Cornflour is used to thicken the pineapple mixture. It helps the filling set properly and prevents it from becoming runny after baking. 

    Q. How do I know the pie is baked properly ? 

    The crust should turn golden brown and crisp. And the filling should look firm and set when baked. 

    Q. Can I make pineapple pie ahead of time ? 

    Yes, you can prepare it a day in advance and store it in the fridge. It actually tastes better after resting. Reheat them gently before serving.

    Ingredients
      

    • 1 batch Basic Shortcrust Pastry

    For Pie Filling

    • 2 cups Pineapple pureed
    • 2 cups Pineapple chopped finely
    • ¾ cup Sugar or to taste
    • ½ teaspoon Pineapple extract
    • 2 teaspoon Lemon juice
    • 2 tablespoon Cornstarch
    • 2 tablespoon Water

    For Brushing over pastry

    • 2 tablespoon Milk for brushing on top
    • 1 teaspoon Granulated Sugar

    For Glaze

    • 1 tablespoon Hot Water
    • 1 tablespoon Honey or Corn syrup

    Instructions
     

    • Preheat the oven for 200 degree C. Butter a pie dish well and set aside.
    • First make the filling, in a pan add pineapple puree, pineapple chunks ,sugar. Mix well. Cook this for 5 mins or so. Add in cornstarch mixed with water and mix well. Add in essence and lemon juice. Mix these together and till it becomes a thick jam like consistency. Set aside to cool.
    • Take your pastry, Divide this into two equal portion. Roll it in round shape by placing it between two plastic sheet, slightly more than the pie plate. and place this in the well buttered pie crust and press it using your hands.
    • Remove the plastic wrap and spoon the filling in it.
    • Take the other dough and roll it exactly the same way as you did for the previous one. Cover the pie with this.
    • Make slashes over it, make some design with the leftover pastry, Brush the top with milk and sprinkle with sugar.
    • Bake this for 30 mins in 200 degree C, Now reduce the temp to 180 Degree C and bake for another 15 to 20 mins. Remove it from oven and set aside to cool for 10 minutes.
    • Take hot water and liquid glucose in a bowl and mix well till it is melted. Now brush with the baked pie with the glaze.
    • After they cool down slice them and serve room temperature or chilled.
