I love making pies. My favourite is apple pie, I have already shared a rustic apple pie and i wanted to share a updated version of it..Hence i made this one.. I used my homemade shortcrust pastry recipe. It is a fool proof recipe, i use them for all my pies, tarts and stuffs like that..

Homemade Shortcrust Pastry
This pie is so delicious, the crust is buttery the filling is sweet, cinnamony and full of delicious stuffs..It tasted great with a scoop of icecream..Yum when served hot or warm..The addition of orange juice and zest goes well with the apples..And never miss to add cinnamon and a pinch of nutmeg, it really makes the dish. And the amount of sugar totally depends on you..

Baking Time : 45 to 50 mins
Serves : 6 to 8
Ingredients:
Basic Shortcrust pastry dough (Check this for recipe) – One Batch
Butter for greasing pie dish

For Filling:
Apple- 3 peeled and sliced thinly
Sugar – 1/2 cup to 3/4 cup
Black raisins – 2 tblspn
Cinnamon powder – 1 tsp
Nutmeg Powder – 1/4 tsp
Orange Juice – 2 tblspn
Orange Zest – 1 tsp
Nutmeg Powder – 1/4 tsp
Orange Juice – 2 tblspn
Orange Zest – 1 tsp
Salt a pinch
All Purpose Flour / Maida – 2 tblspn
For Topping:
Egg or Milk for brushing on top
Sugar – 1 tblspn for sprinkling on top
Method:
Preheat the oven to 200°C..Butter a pie plate generously and set it aside. I used a 15 cm pie dish.
Take the pastry out the prepared dough out of fridge and cut into two equal portions.
Take one of the dough and roll in between two sheets of plastic wrap. Line the pie plate with the sheet. Put this in fridge till you make filling.
Make the filling by mixing all the ingredients given for filling.
Take the other sheet and roll exactly like the same.
Fill the pie plate with the prepared filling and cover it with the other dough sheet.
Fold the rim and using a fork pinch the sides of the rim.Take a knife and make slashes in the centre of the dough.
Brush the top with some milk or egg wash and sprinkle with sugar.
Bake this for 30 mins in 200 degree C, Now reduce the temp to 180 Degree C and bake for another 20 to 25mins. Remove it from oven and set aside.
Serve warm or chilled.

check whether the pastry is bigger than the dish |
peel off the wrap |
take it carefully |
flip it over the pie dish |
press it carefully |
line the pie dish evenly |
peel off the plastic sheet |
Now it is lined..You can put this in fridge till you make the filling |
Take all your ingredients |
Take some crunchy and juicy apples |
Peel it |
Cut it in half |
Quarter them and deseed them |
Slice them thinly |
Take it in a bowl |
Add in some orange juice |
add in sugar |
Add in some flour |
Add in cinnamon |
Add in orange zest |
Now add in some raisans |
Add a pinch of nutmeg |
toss well |
Spoon this over the pie |
roll the other sheet |
Cover with other rolled pastry |
Pinch off the sides |
Use a fork to seal the sides |
Now it is done |
Make few slashes on top |

Sprinkle some sugar on top and bake |
Baked till golden and bubbly.. |
Cool a bit |
Slice and serve |
