    Oatmeal Muffins

    I enjoy warm muffins with a cup of cold milk for breakfast, actually they are my favorite kind of breakfast. These are my latest favorite, i can enjoy them without any guilt since they are made using oatmeal and it has no fat in them. The apple sauce in this recipe acts as a fat free moist provider to the muffins and keeps the muffins incredibly moist, And the addition of fruits in this makes this even more healthy and moist.

    About this Recipe

    A muffin is an individually portioned baked product, but the term can refer to one of two distinct items: a part-raised flatbread baked and then cooked on a griddle, or a quick bread chemically leavened and baked in a mould.

    The type of muffin we enjoy is a decidedly American treat that dates back to the mid-nineteenth century. When pearlash was discovered in the mid-nineteenth century, the first written recipes for American- style muffins appeared. Muffins frequently include fruit, nuts, and spices.

    Oatmeal is a porridge that is made from milled, steel-cut, or rolled oat grains. Oats, an ancient cereal grain, come in a variety of forms, from rolled oats to instant oatmeal to whole oat groats, but they all begin as oat plant seeds.

    They are also known as ‘Jaie’ in India. Oats are widely grown in Haryana and Punjab in India; these grains require paddy fields to grow. Furthermore, these plants are typically grown using an organic cultivation method.

    Ingredients for Oatmeal Muffins

    Rolled Oatmeal :

    Oatmeal has a bland flavour with some earthy undertones. Because it absorbs so much water during the cooking process, oatmeal is one of those foods that absorbs the flavour of whatever it is cooked with or mixed with.

    Baking Powder :
    Baking powder is used to increase the volume of baked goods and lighten their texture. It works by releasing carbon dioxide gas into a batter or dough via an acid–base reaction, which causes bubbles in the wet mixture to expand and thus leaven the mixture.

    Brown Sugar :

    Brown sugar is naturally moist, so using it results in softer, moister baked goods. Also, if you use brown sugar instead of granulated white sugar, your baked goods may turn out darker than you expected.

    Vanilla Essence:
    Because of the fantastic flavour it adds, vanilla essence is used in almost every recipe for baked goods. Vanilla extract is always added to desserts because it adds flavour chemically and also brings out the flavours of other ingredients in the mixture.

    • Instant Oats or Rolled Oats - 1.5 cup / 135 grams
    • Brown Sugar - ¼ cup / 45 grams
    • Baking Powder - 1 tsp
    • Milk - ½ cup / 120 ml
    • Egg - 1
    • Apple - ½ cup pureed (or use apple sauce)
    • Vanilla Essence - 1 tsp
    • Bananas - ½ cup chopped
    • Strawberries - ½ cup chopped
    • Almonds - ¼ cup chopped

    How to Make Oatmeal Muffins

    1. Preheat oven to 190 degree C. Grease 6 cup muffin pan with cooking spray and set aside.
    2. Now take egg, sugar, apple sauce, vanilla, milk in a bowl and whisk till creamy.
    3. Add in oatmeal, baking powder and mix well.
    4. Add in bananas and strawberries and mix well.
    5. Now use an ice cream scoop to fill muffin cases and top with chopped almonds. 
    6. Bake this for 30 to 35 mins.
    7. Remove it from oven and let it cool for 5 mins, now remove them from mould and set aside to cool down.
    8. You can enjoy warm or store in fridge for 4 to 5 days, Warm in microwave for few sec before serving.

    Ingredients

    Oatmeal Muffins Step by Step

     
    First lets make apple puree...if you have apple sauce you can use that

     

    puree some peeled chopped apples in a blender till smooth..
    This puree is going to give so much moistness to the muffins without oil

     

    Take a 6 cup muffin pan

     

     
    Use a cooking spray and spray them well

     

    set aside

     

    Take your other ingredients

     

    take egg in a bowl

     

    add in apple puree or sauce

     

    add brown sugar

     

    milk

     

    add vanilla

     

    whisk till sugar is melted

     

    add in oats

     

    add baking powder

     

    mix well

     

    now you can add in any fruits u like..i added some bananas

     

    and chopped strawberries

     

    mix well

     

    use an ice cream scoop to scoop the batter

     

    fill the muffin mould..fill it to the top

     

    DONE

     

    take your chopped almonds

     

    top the muffins with almonds

     

    bake till done..remove it and cool a little

     

    the muffins will pop right off the pan easily..

     

    Enjoy warm

     

    Look how moist and soft it looks

      Very healthy recipe..can I make it as a cake instead of muffins? Also u didn't use butter or oil in it...would it still turn out good without those ingredients?

      @Anonymousnot sure about that cake version. In this recipe the apple sauce act as a moist agent.

      Thanks for sharing this yummy and healthy muffin post. Could you please specify the temperature at which it needs to be baked. Also can we grease the muffin moulds with butter if not the cooking spray.
