    Roasted Chicken Drumsticks

    Now coming back to the recipe. I have already told you my love for fried chicken, but at the same time I always love baked chickens too. This one was on my list for so many months, ever since I saw this on nigella lawson's show. I wanted to try it so badly, but somehow keeps forgetting. Yesterday when I was going through my todo
    list I found this recipe. So immediately I got into actions. Actually I changed the ingredients a bit and made it to my taste.

    About Roasted Chicken Drumsticks

    The drumsticks are attached to the thigh and are part of the leg. This cut is available bone-in or skin-on. Drumsticks, like thighs, are a fattier, tougher cut of meat than lean chicken breasts, but they also have a lot more flavour.

    Buttermilk is a fermented milk beverage. It was traditionally the liquid left over after churning butter from cultured cream. Because most modern butter is made with uncultured sweet cream rather than cultured cream, most modern buttermilk is cultured separately.

    Buttermilk can be consumed on its own or used in cooking. The acid in buttermilk reacts with the raising agent, sodium bicarbonate, to produce carbon dioxide, which acts as a leavening agent in soda bread. Buttermilk is also used in the marinating of chicken and pork.

    What does marinating chicken in buttermilk do?

    Buttermilks slight acidity allows it to tenderise the chicken without making it tough and chewy. When you dredge the chicken in the dry mix, the buttermilk helps it become flaky.

    Roasting imparts a crispy outer texture and caramelisation to more firm foods, whereas baking is better for foods that begin soft, such as batters and doughs.

    Ingredients for Buttermilk Roasted Chicken Drumsticks 

    Chicken Drumstick :
    Most people are familiar with the phrase tastes like chicken, and chicken legs do indeed taste like chicken. They have a more unctuous texture and mouth feel due to the dark, fatty meat. You'll also notice that the flavour is a little stronger than that of chicken breast.

    Buttermilk :
    The flavour of buttermilk is similar to that of yoghurt, and most people prefer it chilled. It has a slightly thicker texture than regular milk but is not as heavy as cream. It gives pancakes and baked goods a distinct tang.

    Chilli Powder  :

    Chili powder is a spice blend, and recipes differ from cook to cook and company to company. It typically contain cayenne pepper, paprika, cumin, oregano, and garlic. It enhances the flavour and heat of recipes.

    I went to my near by supermarket and bought the stuff which I needed, actually there is not much for me to purchase. Because the stuffs needed for this recipe is so simple and was always a standby in my pantry and freezer. Marinated the chicken yesterday night and just throw this in the oven today morning. I brought it to my friends and they all loved it a lot.

    Ingredients
      

    • 10 Chicken Drumstick
    • 2 cup Buttermilk You can mix curd with some water
    • 2 tbsp Ginger Garlic Paste
    • 4 tbsp Oil
    • 2 tsp Chilli Powder
    • 1 tsp Freshly Ground Pepper
    • 1 tsp Cumin Powder
    • Salt to taste
    • 1 tsp Sugar

    Instructions
     

    • Take a large ziploc bag, place the chicken drumstick in.
    • Pour buttermilk, chilli powder, cumin powder, salt, sugar, ginger garlic paste, pepper, oil into the bag.
    • Shake the bag to mix well. Now place this in fridge to marinate overnight or 3-4 hours.
    • Preheat the oven to 200 Degree C / 400 Degree F.
    • Next day. Foil line a baking tray and spray some oil over it.
    • Arrange the chicken pieces on the tray leaving space between them.
    • Bake it in the oven for 30 mins. Remove the tray from the oven and flip them over. Now cook it for 15 more mins or it is nicely browned and cooked all the way through.
    • Remove them from oven and allow it to cool down for 5 mins.
    • Serve warm or hot with any dish.

      After frying n oil,i saw blood oozing from fried chicken.why it s happening.

      Plz let me know if the quantity of legs for cooking is reduced from 10 chicken legs to 5 chicken legs than will the time for baking be reduced from 30 minutes to 15 minutes.

        No cooking time will be same. Keep an eye on it always because each oven will vary
