    Chilli Oil Noodles

    I have been drooling over this recipe for the past month. I wanted to try it so badly finally last week I tried both chilli oil and garlic chilli oil noodles. This recipe is very easy to make and you need basic ingredients which you already have in your fridge. Finding the balance of ingredients is key in this recipe. This noodle dish makes a great late night snack as well.

    About Chilli Oil Noodles Recipe

    Chilli oil is one of the most popular and addictive condiment in the entire world. It can be added to any soups, salads, noodles or pasta to elevate it completely. I have shared the recipe for the most addictive chilli oil in the past. This recipe is similar to that but it can be made in the instant if you don't want to make a bottle of chilli oil. You need few ingredients like garlic, spring onions, sesame seeds, chilli flakes, oil and some basic condiments like soy sauce and vinegar. Any noodles can be used including instant noodles.

    I used wheat noodles which cooks in three minutes, so I can have my bowl of chilli oil noodles in under five minutes. I always have spring onions growing in my garden so I can snip a few and add it into my noodles.

    Chilli Oil Noodles Ingredients

    Garlic - this recipe uses tons of garlic. I like to chop my garlic really finely. You can grate garlic if you want.

    Spring onions - take few spring onions and chop them very finely. This is added along with garlic to make the sauce.

    Toasted Sesame Seeds - use toasted sesame seeds for best taste and texture. You can toast the sesame seeds yourselves, just toss it in a dry pan for few seconds.

    Red Chilli Flakes - this is for heat. Add as much as you want. Also if you want, you can add some paprika as well.

    Oil - You can neutral oil if you don't want the sesame flavour. But you can sesame oil as well.

    Soy Sauce & vinegar - soy sauce and vinegar adds the salty and tangy touch to the dish.

    Sugar - this is important to balance the taste, you can add some honey.

    Noodles - I am using thin wheat noodles in this recipe. You can use any noodles that you have on hand. Even instant noodles works.

    How to Make Chilli Oil Noodles

    Cooking Noodles

    Bring water to a rolling boil add salt to the water. Add in your noodles and cook it as per package direction. Once the noodles are cooked, drain it in a sieve and rinse it with cold water. Drain the noodles completely and set aside till use.

    Making Chilli Garlic Oil

    In a mixing bowl take in garlic, spring onions, sesame seeds, chilli flakes. Heat your 4 tablespoon of oil till it gets smoking hot. Pour the hot oil over the garlic chilli flakes mixture and mix it really well. I didn't soy sauce, sugar, salt, vinegar and mix till the sugar is completely dissolved. This is your chilli oil garlic mixture.

    Now add in your cooked noodles into your chilli oil and used two forks or a tongs and toss it completely so the noodles is coated in the garlic chilli oil mixture. Serve immediately.

    How to Make Chilli Oil Noodles (Stepwise Pictures)

    Cooking Noodles

    1)Bring water to a rolling boil add salt to the water. Add in your noodles and cook it as per package direction.

    I am using thin wheat noodles in this recipe. You can use any noodles that you have on hand. Even instant noodles works.

    2)Add noodles to boiling salted water and cook as per package directions.

    3)Strain the noodles in a sieve and rinse it really well. Set aside.

    Make Chilli Oil

    4)Take finely chopped garlic and spring onions in a mixing bowl that is heat safe because we will be pouring hot oil over this.

    5)Add in sesame seeds over this.

    6)Add in red chilli flakes. And a little paprika if you want.

    7)Pour in hot oil over this and mix well.

    8)Mix the hot oil into the garlic and spring onions so the spices bloom.

    9)Add in soy sauce and mix well.

    10)Add in sugar to taste. You can add some honey if you like.

    12)Add in vinegar and mix well.

    13)This is your chilli oil.

    Tossing in Noodles

    14)Add in the cooked noodles into the chilli oil.

    15)Toss the noodles really well in the oil.

    Expert Tips

    • You can skip adding spring onions and use regular onions instead. Make sure you finely chop the onions.
    • Red chilli flakes can be substituted with gochugaru or paprika. Fresh red chilies which of finely chopped can be used as well.
    • Make sure you get the oil to smoking hot to bring the flavours of the garlic and onion out.
    • Toasted Sesame oil can be used as finishing oil.
    • This noodles can be topped with fried egg to make it a complete meal.
    • Any noodle variety can be used in this recipe. Some options or soba noodles, Ramen noodles, rice noodles, instant noodles or udon noodles.
