    This is one dish which I can have any time of the day. The name and look may sound complicated but actually it is easy and simple. All you need is to marinate chicken, cook rice and chicken together, pour sauce, mix and eat. I have tasted clay pot chicken rice during my trip to Singapore and loved every bit of it.

Rice in the bottom get slightly charred from the heat and taste super delicious when consumed together. Making clay pot chicken at home is easy that you think. You can use mud or earthen ware pot for this recipe too. 

    About Clay Pot Chicken Rice 

    Clay pot chicken rice is seriously addictive flavourful rice dish which is widely popular all over Asian countries. Rice and chicken cooked together in a clay pot which makes it super flavourful. The sauce added on top soaks into the rice to create a flavourful coating over the rice. While clay pot chicken is popular around street vendors, it is equally loved and made in Chinese home cooked meals. 

    Chicken thigh is marinated with garlic, ginger, toasted sesame oil, soy sauce and other flavourings for few hours. This marinated chicken is topped over rice and cooked together in a clay pot. The sauce which we add on top of the cooked chicken rice really elevates this clay pot rice to a whole new level. A savoury sauce made with scallion oil, hoisin sauce, soy sauce and sesame oil is poured over the chicken rice and mixed. Final garnish of fried onions, garlic, spring onions makes this one pot dish so delicious. 

    Clay pot chicken is cooked in a specially made clay pot is used for cooking this chicken rice. It is individual portion size pot which has a thick bottom and a handle which distributes heat evenly to create a crispy layer on bottom as well.

    Clay pot chicken rice gets its main taste from the chicken and its marination. It is important to marinate chicken with the right sauces to get the flavour right. I used shaoxing wine or Chinese cooking wine. It helps remove the gamey smell from the chicken. I also used some vinegar to add flavour and taste to the chicken.

    Chicken thigh is marinated with garlic, ginger, toasted sesame oil, soy sauce and other flavourings for few hours. If you prefer spicy clay pot chicken rice, you can use chilli sauce or chilli powder in the marination.

    Clay Pot Chicken Rice Ingredients

    Chicken - boneless chicken thigh is the perfect choice for clay pot chicken rice. Since it stays juicy even after cooking for a longer period of time. You can use chicken breast as well. 

    Rice - I used jasmine rice for this recipe. It is important to soak the rice for faster and even cooking. You can use shortgrain rice as well.

    For Marination - getting chicken marinated perfectly is very important. I used dark soy sauce, ginger, garlic, vinegar, brown sugar, hoisin sauce, white pepper powder, toasted sesame oil, cooking wine to get the flavours perfect.

    Sauce - The sauce which we add on top of the cooked chicken rice really elevates this clay pot rice to a whole new level. A savoury sauce made with scallion oil, hoisin sauce, soy sauce and sesame oil is poured over the chicken rice and mixed. 

    Toppings - Final garnish of fried onions, garlic, spring onions makes this one pot dish so delicious.

    Clay pot chicken rice is cooked on an open flame which gives the smoky taste to the rice and the whole meal. 

    How to Make Clay Pot Chicken Rice (Stepwise Pictures)

    Marinating Chicken

    1)Take all your ingredients for chicken marination.

    2)Take boneless chicken thigh in a bowl.

    3)Add all the marination ingredients into the chicken.

    4)Mix chicken with the marination ingredients. Set aside for 30 mins.

    Soaking Rice

    5)Soak Jasmine rice in water for 30 mins to 1 hour. 

    Fried Onion & Garlic

    6)Heat oil and add in onions, fry till golden. Remove and set aside.

    7)In the same oil fry garlic till crispy and set aside.

    8)Now use the onion garlic fried oil for making sauce. 

    Sauce for Clay Pot Chicken Rice

    9)In a bowl, combine hoisin sauce, dark soy sauce, fried onion garlic oil and toasted sesame oil. This is your sauce.

    10)Clay pot chicken sauce is ready.

    11)Your clay pot chicken rice sauce, fried onion and garlic is ready.

    Cooking Clay Pot Rice

    12)Now let's make clay pot rice. Take a clay pot.

    13)add in soaked rice.

    14)Add chicken stock and bring it to a full boil.

    15)Now place as much chicken as you need over rice.

    16)Cover and cook on low heat for 15 mins to 20 mins.

    17)Now open lid, drizzle in the sauce.

    18)Cover again and cook on low heat for 5 mins. 

    19)Now top with spring onions, fried garlic, fried onions and toasted sesame oil.

    20)Mix well and enjoy. 

    21)Enjoy.

    • Use small pieces of chicken thigh for this recipe, so it cooks along with the rice evenly.
    • You can use any type of rice in this dish. I prefer to use jasmine rice.
    • You can use any heavy bottom pan with tight fitting lid for this recipe.
    • Serve clay pot chicken rice hot for best taste.

    Ingredients
      

    For Chicken Marination

    • 200 grams Boneless chicken thigh cubed
    • 2 tablespoon Ginger peeled & chopped finely
    • 2 tablespoon Garlic peeled & chopped finely
    • 1 tablespoon Toasted sesame oil
    • 1 tablespoon Dark soy sauce
    • 2 teaspoon Vinegar
    • 1 tablespoon Brown sugar
    • 1 teaspoon Salt to taste
    • 1 teaspoon White pepper powder
    • 1 tablespoon Hoisin sauce
    • 1 teaspoon Chinese cooking wine optional

    For Onion Garlic Oil

    • 2 tablespoon Oil
    • 1 small Onion peeled & sliced thinly
    • 5 cloves Garlic peeled & chopped

    For Sauce

    • 2 tablespoon Onion Garlic fried oil
    • 1 tablespoon Hoisin sauce
    • 1 tablespoon Dark soy sauce
    • 1 tablespoon Toasted sesame oil

    For Rice

    • ½ cup Jasmine rice
    • ½ cup Chicken stock

    For Topping

    • 2 no Spring onions chopped)
    • 1 teaspoon Toasted sesame oil
    • Fried onions & garlic

    Instructions
     

    • Mix chicken with marination ingredients. Set aside for 30 mins. Soak Jasmine rice in water for 30 mins to 1 hour.
    • Heat oil and add in onions, fry till golden. Remove and set aside. In the same oil fry garlic till crispy and set aside. Now use the onion garlic fried oil for making sauce.
    • In a bowl, combine hoisin sauce, dark soy sauce, fried onion garlic oil and toasted sesame oil. This is your sauce.
    • Now let's make clay pot rice. Take a clay pot, add in soaked rice. Add chicken stock and bring it to a full boil. Now place as much chicken as you need over rice. Cover and cook on low heat for 15 mins to 20 mins. Now open lid, drizzle in the sauce. Cover again and cook on low heat for 5 mins.
    • Now top with spring onions, fried garlic, fried onions and toasted sesame oil. Mix well and enjoy.
