Easy Chicken Curry with Coconut Milk

One night i was wondering what to cook for dinner. I had some readymade roti on hand so decided to make something quick. I was in a mood for some chicken curry. but i was too lazy to take the pain of going through so many steps. I had some store bought coconut milk on hand, so immediately i made this simple coconut milk chicken curry. It turned out just wonderful..

Preparation Time : 10 mins
Cooking Time : 35 to 40 mins
Serve : 4


Ingredients:

Chicken – 500 grams cut into small pieces
Onion – 2 large sliced thinly
Fennel Seeds / Sombu / Saunf – 1 tblspn
Cinnamon / Pattai – 2 cm piece
Thick Coconut Milk – 1 cup
Oil – 3 tblspn
Coriander Leaves – 3 tblspn finely chopped

For Marinating:
Garam Masala Powder – 2 tsp
Pepper Powder – 1 tsp
Salt to taste
Lemon Juice – 1 tblspn

For Masala:
Ginger – 1/4 cup chopped
Garlic – 1/4 cup chopped
Green Chilli – 6 to 7

Method:

Take grinding ingredients in a blender and make it into a fine puree.

Take chicken and the ingredients given for marination in the bowl, Add in half of the ground masala in and mix well. Leave this to marinate for 15 mins.

Heat oil in a pan, add in fennel seeds and cinnamon. Let it sizzle for a min.

Add in onions and salt. Fry till light golden.

Add in remaining masala in and fry for few mins till oil separates.

Add in chicken and saute till it gets well seared. Now cover it and simmer for 30 mins till chicken is cooked.

Now add in thick coconut milk and coriander leaves. Mix well.

Serve.

Take all your ingredients
Take chillies, ginger, garlic in a blender
puree till smooth
Take chicken in a bowl
add in garam masala powder and pepper powder
add in half of the ground masala
add in lemon juice
Add in salt
mix well and set aside for 30 mins
Heat oil in a kadai. Add in fennel seeds and cinnamon
Add in onions
fry them in oil
add in salt
fry till golden
add in remaining masala
saute till oil separates
add in chicken
fry for 5 mins or so
now it is well browned
cover and simmer till the chicken is cooked
now the chicken is cooked 
add in coconut milk
mix well
add in coriander leaves
mix well
