    Chicken Curry with Coconut Milk

    One night i was wondering what to cook for dinner. I had some readymade roti on hand so decided to make something quick. I was in a mood for some chicken curry. but i was too lazy to take the pain of going through so many steps. Had some store bought coconut milk on hand, so immediately i made this simple coconut milk chicken curry. It turned out just wonderful.

    Ingredients for Chicken Curry with Coconut Milk

    • Chicken - 500 grams cut into small pieces
    • Onion - 2 large sliced thinly
    • Fennel Seeds / Sombu / Saunf - 1 tblspn
    • Cinnamon / Pattai - 2 cm piece
    • Thick Coconut Milk - 1 cup
    • Oil - 3 tblspn
    • Coriander Leaves - 3 tblspn finely chopped

    For Marinating:

    • Garam Masala Powder - 2 tsp
    • Pepper Powder - 1 tsp
    • Salt to taste
    • Lemon Juice - 1 tblspn

    For Masala:

    • Ginger - ¼ cup chopped
    • Garlic - ¼ cup chopped
    • Green Chilli - 6 to 7

    How to Make Chicken Curry with Coconut Milk

    1. Take grinding ingredients in a blender and make it into a fine puree.
    2. Take chicken and the ingredients given for marination in the bowl, Add in half of the ground masala in and mix well. Leave this to marinate for 15 mins.
    3. Heat oil in a pan, add in fennel seeds and cinnamon. Let it sizzle for a min.
    4. Add in onions and salt. Fry till light golden.
    5. Add in remaining masala in and fry for few mins till oil separates.
    6. Now add in chicken and saute till it gets well seared. Now cover it and simmer for 30 mins till chicken is cooked.
    7. Now add in thick coconut milk and coriander leaves. Mix well.
    8. Serve.
