I would never thought adding banana to pancake batter would be life changing. It not only made the pancakes super light and fluffy, but added a dessert like taste to the pancakes which I simply loved.

And banana acts as egg substitute in this recipe made the pancakes so light and fluffy. I used banana, sugar, vanilla, milk, plain flour and baking powder. Cinnamon powder and banana goes super well together so I added a pinch of it in the batter.

If you prefer healthy alternative, you can swap whole wheat flour instead of plain flour. Enjoy banana pancakes with maple syrup, more sliced bananas and you are good to go. For regular pancakes, check my super soft pancakes.

    Banana Pancakes Ingredients

    • Ripe Banana - use ripe banana for making the pancakes. It adds natural sweetness to the pancakes and act as a egg substitute.
    • All Purpose Flour - I used plain flour for making this, but I have tried this recipe with whole wheat flour and it works.
    • Sugar - reduce the amount of sugar if you are going to serve it with syrup.
    • Milk - for vegans you can use any dairy free milk like almond milk, oat milk or soy milk.
    • Baking Powder - makes pancakes light and fluffy!
    • Ground cinnamon - Bananas and cinnamon goes well together so add a dash of cinnamon.
    • Vanilla Extract - optional but highly recommended.
    • Butter - use this to fry the pancakes and dollop some over cooked pancakes.

    Step by Step pictures

    Make Eggless Banana Pancake Batter

1)take banana in a bowl. Make sure you use ripe banana. Riper the banana, more tasty and sweet it will be.

2)use a fork or potato masher to mash the banana roughly. If you don't prefer chunky bananas in your pancakes, you can puree it in a blender or food processor.

3)Add sugar to taste. You can skip sugar if your banana is sweet. Also honey and maple syrup can be used.

4)Pour milk and mix well. if you are vegan you can use dairy free milk.

5)Add a dash of ground cinnamon. This is totally optional. If you don't prefer that flavour, you can skip it.

6)Drizzle in vanilla extract and mix well. This is your wet ingredients.

7)Now add in plain flour. You can use whole wheat flour instead of plain flour or use a combination of both.

8)Add in baking powder. This is what makes the pancake light and fluffy when cooked.

9)Mix to a smooth batter. Don't over mix the batter. Add in melted butter or oil into the batter and mix.

    10)Pancake batter is ready.

    Cooking Pancakes

11)Heat very little oil or butter in a pan. Pour a ladleful of batter in the pan and cook till bubbles form on top.

12)Flip over and cook till golden.

13)Serve hot pancakes on a plate, top with sliced bananas.

14)Drizzle with honey or maple syrup.

    15)Serve.

    Expert Tips

Choosing Banana - you have to use ripe bananas, any variety would do. Riper the banana more taste and fluffy the pancakes will be.

Texture of banana - if you don't prefer chunky banana in your pancake batter, you can puree the bananas instead of mashing it.

Spices - I used cinnamon and vanilla since I like this combination. You can skip cinnamon and use other spices like cardamom, dry ginger also.

Vegan - to keep it vegan friendly, use dairy free milk instead of regular milk. Oil instead of melted butter.

Storage - cooked pancakes can be stored in fridge upto 3 days. it can be frozen upto 3 months. Reheat before serving.

Serving - Enjoy with more sliced bananas, blueberries, maple syrup or honey. You can have it with compote or dusting of powdered sugar.

        Hi
I love this recipe. I often use it.
One question though, I mixed up the steps because I was in a hurry and put the baking powder with the mashed banana first and I dont know if it's because of that, that the pancake isnt really rising and it tastes rubbery. Do you know what I can do to fix it. Please help and thank you for your time and assistance.

The banana used in this recipe looks very much like a plantain. Is it a Special variety of banana? In my experience the banana is usually turn grey in recipes like this.

I have two kids with an egg allergy and they are picky eaters. When I make a recipe they love they will eat it over and over and these are our new breakfast staple. Love them!
