    I have been eyeing on this recipe for a very long time. This is nigella's recipe, i was looking for ricotta cheese to make this, but sadly i couldn't get it anywhere in my place. When we visited Goa and we went to a super market there and i was very excited to see ricotta cheese there, immediately i grabbed it and was thinking to make this as well a lemon ricotta cake which i wanted to bake for a long time.

    Finally yesterday I made it and it was delicious. I tweaked this recipe a little and it turned out one of the fluffiest pancake ever. I made a quick strawberry sauce to go with it.

    About Ricotta Pancakes

    Ricotta cheese is made with whole milk and cream. It has a creamy milky texture to it which is used to make desserts, cakes, pasta. It is widely used in and around Italy.

    Some of the most popular recipe made using ricotta cheese is cakes and desserts. But I love using it in pancakes. It creates a milky yet rich tasting PANCAKES WHICH TASTE DELICIOUS.

    Ricotta pancakes is also known as ricotta hot cakes. It is made with eggs, plain flour, milk, sugar, vanilla.

    Ingredients

    Ricotta - ricotta is a special cheese that makes this pancakes super tender, light and delicious. You can use low fat ricotta or full milk cheese. You can use homemade ricotta cheese as well.

    Egg - This recipe uses eggs, egg yolk is mixed with cheese. Egg whites is whipped and folded into the batter to make it light and airy.

    Plain Flour - a small amount of flour is used in the pancakes. you can use whole wheat flour instead of plain flour.

    Sugar - since this pancakes is served with syrup, you can add a bit of sugar in the batter.

    Milk - milk helps lighten the batter and makes it pouring consistency. Dairy free milk or nut milk can be used.

    Baking powder - you need a bit of baking powder to provide the lightness to the batter.

    How to Make Ricotta Pancakes (stepwise pictures)

    Take all your ingredients
    Take strawberries in a sauce pan
    add sugar
    cook for 5 mins and set aside
    separate egg yolk and egg whites
    whisk egg whites
    whisk till frothy
    take egg yolk
    add ricotta
    add vanilla
    sugar
    add milk
    whisk well
    add flour
    add baking powder and salt
    mix well
    add the whisked egg white
    fold gently
    done
    heat butter in a pan, spoon ladleful of batter in
    cook till golden on both sides
    done
    remove it in a plate
    top with strawberry sauce
    Enjoy
     
     

    Expert Tips

    • You can use low fat ricotta cheese if you have only that.
    • You can use whole wheat flour instead of plain flour.
    • Blueberry compote can be served with this pancakes. 
    • You can enjoy the pancakes with maple syrup or honey too.

    Equipment

    • Skillet
    • mixing bowl and whisk

    Ingredients

    • ½ cup All Purpose Flour 60 grams
    • ¼ cup Milk 60 ml
    • 1 large Egg
    • ½ tsp Baking Powder
    • 120 grams Whole Milk Ricotta Cheese
    • ½ tsp Vanilla Extract
    • 1 tbsp Sugar
    • ½ tsp Salt a pinch
    • 1 tbsp Butter

    For Strawberry Compote

    • 2 cups Strawberries chopped
    • ¼ cup Sugar

    Instructions

    • Separate egg yolk and egg whites. Whisk egg whites till it is frothy, set aside.
    • Take egg yolk, sugar, ricotta cheese, milk, vanilla in a bowl and whisk well. Add in flour, baking powder and salt and fold gently. Add in egg whites and fold gently.
    • Now heat a nonstick pan with some butter, spoon ladleful of the batter in and fry till golden on both sides. Remove and serve with strawberry sauce.
    • For making strawberry sauce, Take strawberries and sugar in a sauce pan. Cook for 5 mins till it thickens. Serve with Pancakes.
