    Cottage cheese pancakes is my new obsession, this pancake recipe has gone viral for a reason. This fluffy pancakes is made with homemade cottage cheese which is not only delicious but is high in protein which has become my top favorite of all pancakes. Learn how to make this simple cottage cheese pancakes with step by step pictures and video.

    I have started incorporating cottage cheese more in our diet because of its protein content. 1 cup of cottage cheese have more than 25 grams of protein which makes it an ideal breakfast option.

    Making cottage cheese at home is super easy and budget friendly. I have a recipe for homemade cottage cheese on this blog. You can also check the cottage cheese ice cream recipe that went viral in the year 2023 because of its high protein content. Not to mention, it is tasty. 

    About Cottage Cheese Pancakes

    Cottage cheese is nothing but soft milk curdles that is mixed with some cream to create silky creamy pockets of curds. It has very little salt added to enhance the taste. Traditionally cottage cheese is served with fresh fruits, berries and honey as breakfast. It can be used in cooking, in pasta and smoothies to add extra protein. 1 cup of cottage cheese has around 25 grams of protein. 

    If you are looking for easy recipes that uses cottage cheese, then this is the answer. This cottage cheese pancake is so easy to prepare. All you need is a handful of ingredients and the resulting pancakes is too good. The main ingredient in this recipe is the cottage cheese and eggs which is blend together and mixed with flour to make the batter. 

    The pancake batter looks so fluffy, light and airy because of the beaten eggs and baking powder combination. The batter is scooped on hot oil and fried till crispy and golden. Once the pancakes are cooked, it turn out so fluffy, light and moist. Enjoy hot griddled pancakes with syrup, honey and fresh fruits for a satisfying breakfast.

    Cottage cheese pancakes ingredients

    Cottage cheese - you can easily find cottage cheese in many stores, if you find it difficult to source cottage cheese, making it at home is very easy.  All you need is milk, vinegar or lemon juice, cream and salt. 

    Plain flour - a small amount of plain flour is added to make the pancake batter.  You can use whole wheat flour instead on plain flour as an healthy alternative. 

    Sugar - I used few tbsp of sugar in the batter which doesn’t add too much sweetness instead it balance the creamy cottage cheese taste. 

    Salt - cottage cheese has salt in them, so make sure to add little at a time. 

    Eggs - egg is one of the important ingredient which makes the batter light and airy. Also makes the pancake crispy and fluffy. 

    Baking powder - this recipe uses 2 tsp of baking powder which may sound a lot but it makes it fluffy and soft. 

    Vanilla extract - i used a generous amount of pure vanilla extract to which eliminates the egg smell. 

    Oil - this recipe uses extra oil for frying the pancakes. The oil creates crispy exterior in the pancakes. 

    For Best Results

    Use full fat cottage cheese - use full fat cottage cheese which has more protein than low fat ones. It adds more rich texture in the pancakes. 

    Don’t over mix - when blending eggs, make sure not to over blend the eggs. Also don’t over beat the batter. 

    Using oil - as mentioned this pancakes need extra oil for frying to achieve the right crispy texture. So be generous. 

    Cooking temperature - cook the pancakes on medium heat till golden on both sides. If you cook on too high temperature than the pancakes may burn. 

    How to Make Cottage Cheese Pancakes (Stepwise Pictures)

    Blending Cottage Cheese

    1)In a blender, add cottage cheese. I am using Homemade Cottage cheese. You can use store bought too.

    2)Add in eggs, sugar and vanilla extract.

    3)Blend into a uniform mixture. It takes just few seconds. This is your wet ingredients.

    Making pancake batter

    4)In a bowl, take plain flour. You can use whole wheat flour as well.

    2)Add in baking powder.

    6)Add in salt.

    7)Mix well so everything is evenly mixed.

    8)Now pour the cottage cheese mixture in and gently mix the batter so it gets into a thick and airy pancake batter. 

    9)This is your pancake batter. Pancake batter can be kept in fridge upto a day. Cook pancakes before serving. 

    Cooking pancakes

    10)Heat a skillet on medium heat. Pour in oil for frying pancakes. Now use an ice cream scoop to scoop the batter.

    11)Add each scoop of batter in the skillet leaving space between them because they expand.

    12)Fry on medium heat until light golden in the bottom which will take around 2 minutes.

    13)Now gently flip the pancake and cook on other side too. 

    14)Cook the pancakes on medium heat till both sides is cooked.

    Serving pancakes

    15)Take cooked pancakes on a serving plate.

    17)Serve pancakes hot with berries, fruits, powdered sugar and syrup. 

    18)Enjoy hot.

    Expert tips

    • You can use homemade or store bought cottage cheese in this recipe. 
    • The pancakes is not too sweet which can be served with syrup of compote. 
    • Baking powder makes the pancake fluffy so don’t reduce it. 
    • You can use whole wheat flour instead of plain flour, the texture may vary a little but it will taste great. 
    • Don’t over blend the eggs, else it may make the batter too airy. 

    Serving and Storage

    Cottage cheese pancakes is served hot with syrup, berries, fruits or powdered sugar. 

    Leftover pancake batter can be kept in fridge upto a day. Cook pancakes before serving.

    Equipment

    • Blender
    • Skillet or Frying Pan

    Ingredients

    • ¾ cup Plain flour
    • 2 tsp Baking powder
    • ½ tsp Salt
    • 4 tbsp Oil for frying pancakes

    To Blend

    • ¾ cup Cottage Cheese
    • 2 large Eggs
    • 2 tbsp Sugar
    • 1 tsp Vanilla extract

    To Serve

    • 1 cups Fresh fruits and Berries
    • 1 tbsp Powdered sugar or Icing sugar
    • 2 tbsp Maple syrup or Honey

    Instructions
